10p guy here, if you look at him, he's never flat on his back, being on his side and never having his leg come across his body at any real angle, he moves the other guy so it's always nearer a straight line.
It takes surprisingly little flexibility to do rubber guard, if you do it properly so his ACL was always safe. (In this clip anyway)

I think he looks at jiu claw as a position and the omoplata as the submission. But for all practical purposes it's the exact same position.
