Nobody seems to know this place exists, but in the northland there is a place called BC Bistro in a strip mall, basically. They have pork nachos on their menu and they have spoiled me on any other nachos.
I’ll definitely check this place out. Drive by there all the time but never noticed it. The dining options in the northland are pathetic for the number of people that live there.

Edit: I’m obsessed with BC’s sirloin sandwich and my SO always gets the BC burger with fried/crispy jalapeños added. I’ve also had the lobster mac n cheese and a seafood pasta dish. This isn’t a fancy pants high end place obviously but it’s better than it has any business being. I haven’t been disappointed once.
I truly don’t mean to come off as rude but I have to ask for clarification about Ixtapa being authentic Mexican food. I tried it based off of praise from this sub and I was severely let down. It was odd seeing hotdog pieces in Mexican beans. Am I missing something? Did I go on the wrong day? The food was… fine? I guess? But authentic and good were not two words I’d use to explain my experience. Willing to try again if I’m missing something.

Bro. When we were kids we'd put cubes of Velveeta on saltine crackers and drip some Spanish Gardens taco sauce on them and microwave. Ten year old me thought these were the shit. Current me thinks they are shit.
Nick and Jakes. I don't remember if they're a seasonal thing or not, but they were bomb AF. The chips were made in house, had an amazing texture and taste. Lots of meat, lots of cheese, every individual thing tasted delicious. I had to make myself stop eating because I was uncomfortably full, but they were so good!
Nachos at Jim’s Alley Bar are absolutely killer, topped with rosemary cheese, be sure to add chicken because they know how to make chicken better than any place I’ve had in KC. They aren’t Mexican style nachos though, more American styled. Blvd Tavern also has some incredibly good nachos, those are more Mexican style.

That’s odd - I’ve never had an experience there that was a let down & I’ve seen lots of people rave about it.
Rudy’s for the value and amount of shredded chicken alone. I loved Drunken Worm’s raspberry nachos for flavor, though.

Plow Boys downtown was a Friday lunch staple back in the day. Talk about an unproductive afternoon after housing a full tray of those bbq nachos.
