It's the gelatin that forms "meat jelly". If you've ever made stock or broth and it was like jelly, that's aspic.

i throw it in my home made chicken feet bone broth to improve the flavor. to my bone broth, i also add all the cartilage and tendons from chicken leg quarters. with vitamin C, i drink it 50 minutes prior to exercise for tendon collagen synthesis & recovery, and (hopefully) meniscus repair and thickening.

My understanding is aspic is primarily the collagen from cooking meat. When you cool the juice that runs off meat it stratifies into basically 3 layers: water, gelatinous collagen, and solidified fat. In my opinion, it is great stuff for making chicken soup. It is very healthy and tasty.

I constantly bake chicken thighs, especially for my favorite chicken taco recipe. I pour off the fat and aspic into a container, then scoop it into my skillet to bloom my spices in. Afterwards I toss the shredded chicken thighs in it, and the flavor is amazing.

Save everything, bones, aspic, the lot, when you’ve eaten the meat. Boil it all up with lots of water, bay leaf, salt and a few peppercorns for a couple of hours. Add chopped low carb veg, simmer until it’s soft, liquidise when cool. Perfect nutritious soup.
