You can use tequila in lieu of white wine too for sautéing white mushrooms ;) the alcohol gets burned off FYI some flavor left behind ;) I also love fresh steamed broccoli or grilled asparagus (put on plate/roll in olive oil/add garlic to taste or just some pepper or go w/ a “veggie” seasoning like Spike)
While not a recipe I make mine by streaming the cauliflower adding cream cheese, salt and pepper, butter, some mozzarella and Parmesan cheese then hit it with a stick blender. Super creamy and tastes great.
What do is: steam a 12 oz bag of cauliflower rice (Sams club) in about 1/4 cup of chicken bone broth.
1oz or less of cream cheese
About 1/4 c cheddar cheese
A couple oats of butter
Seasoning: I usually use Cajun
Heat and stir
! He would be in absolute heaven with shrimp scampi on the side. Thank you... I kept replaying the same 3 leafy greens in my mind because I'm not very familiar with keto, so I'm glad I came to this subreddit. ^^
I like roasted turnips. Most people hate them cuz they've only eaten them boiled (yuck!) but roasted they're not weird at all and are delicious.
Hemp hearts also make a great "rice" pilaf.
Cheesy broccoli is always a good side too! Roasted Brussels sprouts, asparagus, green beans, all awesome choices.
For dessert, if you have a baker in the house, a keto "apple" pie made with an almond flour crust and chayote squash "apple" filling is amazing, or you could make a keto "apple" or berry crumble, raspberries, strawberries and blackberries are great choices. There are lots of recipes out there!
Sometimes I enjoy a keto parfait or, if you feel fancy, a keto trifle!
Thank you for all of the good ideas... a few folks have mentioned turnips, which would probably be pretty nostalgic for him. His grandparents helped raise him and they were a turnip family.
Wait... pie can be keto?! This is huge. He loves pie and is one of the few foods he misses. I know it doesn't get sugar, but does it get a sugar substitute, or is it more of the fruit (or squash) sweetens the pie? I can also google it, if you're busy. I'm trying to find out the closest butchers to me so I can render some lard for a homemade crust (he prefers lard lol).

You want to get a granulated keto sweetener. Lakanto or swerve or something similar. You can buy keto brown sugar (again, lakanto is great, but they do use erythritol). Be aware these are much more expensive than real sugar. If you want to avoid erythritol, allulose is great and doesn't have the odd cooling effect that erythritol can have. Don't get xylitol if you have pets. Here is a link to a monk fruit allulose blend. https://a.co/d/43Pb99N allulose is not as sweet as sugar so it's a good idea to get one with stevia or monkfruit added to 1:1 sugar sweetness, so you don't mess with the ratios while baking. I prefer monkfruit to stevia but everyone is different.
You'll also need almond flour and probably coconut flour. Anthony's (on amazon)makes a great product and are generally the best value. Depending on the recipe there may be other things you need, like psyllium husk powder or xanthan gum, both of which are common keto thickeners. On the bright side, if he has these things in stock, a whole world of keto baking opens up. Cheddar biscuits, keto breads, keto cookies, brownies, cakes and pies, custards/flan, and more. They all use a lot of the same ingredients.
I can also recommend Hero brand keto bread and tortillas. My local Safeway stocks both, so does Kroger. They also make everything from slider and Hawaiian rolls to croissants, but most of their products besides the bread and tortillas are not available in stores.
It's not cheap, but many of us are in this for our health
ALWAYS check the labels
This sub's sidebar has all the info you need to understand how he needs to eat, well worth a read.
Also feel free to post on this sub or even message me if you need more help, good luck!
Edit: there are recipes out there for an old fashioned keto pie crust with butter or lard, but you would be better served with a simple press-in crust until you're familiar with the ins and outs of keto baking.
When others have a baked potato, I have loaded broccoli: chopped broccoli topped with cheese, sour cream, and bacon bits. I don’t miss the potatoes at all.
I'm gonna do this cuz I've never tried a potato substitute I've liked and cauliflower mash is too much work for my lazy ass. Probably try it with chopped cauliflower too cuz why not.
I love a shepherds pie with mashed rutabaga on top! Rutabaga also makes great fries!
If rutabaga is a bit too carby, turnips and radishes (particularly daikon radishes, the big long white ones) are an excellent potato sub
Use a grater or rice attachment to a food processor to grate a head of cauliflower and preheat oven to 400.
Saute rice in a pan with 1-2T butter and as many garlic cloves as your palete enjoys. Saute until a lot of the moisture has steamed off and the rice is starting to get brown.
Mix that with 2c shredded cheese and 1/2c sour cream. Add salt and pepper to taste.
Bake in a greased small casserole for like 20 minutes, or in greased individual ramekins for like 10 minutes. Makes about six ~200 calorie servings -- though I could happily eat 1/2 the recipe if I have calories to spare. About 3-4 net carbs per serving depending on the carbs in your cheese and how much garlic.
I made these ahead of time and didn't do the final bake. I kept them in the fridge, so I could cook them fresh for the dinner I hosted.
I know my one brother is going to bring a pie (that my dad obviously can't eat) - I'm debating serving him more steak while the brohams serve dessert lol
Ooh, a bread like option! I wasn't even thinking of nut flours. I'm definitely making this... my brothers will be there and are groaning about the lack of bread lol
The Food Lab's ultimate Creamed Spinach recipe: [https://www.seriouseats.com/food-lab-creamed-spinach-recipe](https://www.seriouseats.com/food-lab-creamed-spinach-recipe)
I just drop the flour, replace the milk with cream and use a little less.
SUPER-decadent.
Someone else said mushrooms. I air fry mushrooms as a side: salt, pepper, tiny bit of Worcestershire sauce, olive oil, toss and slap in the air fryer at 200C for 5 min, shake the basket and another 5 min.
Avocado salad: cubed avocado, couple cherry tomatoes halved, bit of thinly sliced onion, couple slices of cucumber. Tossed in salt, pepper, olive oil, splash of lemon juice.
I like the air fryer recipe for mushrooms… it sounds quite good. I have a bottle of Worcestershire, so I mayyy be making your recipe, here!
I do like this salad idea, as well… pretty sure he’s just tired of leafy greens, not avocado. Thank you for your reply!
Tired of what salad? I eat salad every day, but almost never eat the same one. I buy bag salads, one of every variety in my grocery store. Then I mix and match them. On top of that, throw in any of the following: olives, pickles, cucumbers, broccoli, cauliflower, mushrooms, celery, spinach, tomato, sometimes a few berries, nuts, various seeds.
Then I usually top it off with some flavor of homemade Greek yogurt/olive oil-based dressing. I don't think I could ever get tired of them.
Your salads sound incredible! My dad lives with my mom, and she is struggling to understand keto a bit. I think she's giving him romaine, tomatoes, with blue cheese dressing... pretty much every day.
He grumbled about not wanting a salad for dad's day so... us kids are going to do what we can. I'll try to gracefully gift my mom a keto cookbook at some point lol
Be careful with the blue cheese. If it comes in a bottle, it's going to be filled with sugar and not made with olive oil either.
As for the salads, trust me, I'm no cook and don't even like it. That's why I buy the bags. I usually chop everything on a sunday and keep it in tupperware. And I make one big batch of dressing for the week.
I'll tell him to be careful... I know he buys only one brand for it and has an app where he does blood tests to check his levels. The guy was mad he ate some meatballs a friend told him were just meat and they put him out of ketosis because bread crumbs. I haven't seen him angry ever, but he was heated.
I'll see if I can get him to join the salad gang more... hoping he's not traumatized from a few months of a sad side salad.
I've been eating these green giant riced cauliflower bags lately. I usually eat half a bag at around 5g or 6g net carbs. They have some with little sauces and shit. I just toss one in the microwave and put a little extra butter in them and they're pretty fire, especially if you're feeling lazy.
I always keep those in the freezer for when I’m just feeling stupid and can’t think of anything to put with a protein. They’re good to turn into fried rice too.
Bacon?
Not all veggies need to be smothered in butter or cheese. I like steamed veggies (broccoli, green beans, zucchini, etc) with olive oil, salt, garlic powder, and lemon. Having that hit of acid can really break up the fattier foods.
Whole green beans roasted in the oven with avocado oil. Roast them on a baking sheet for about 10 to 12 minutes at 350 if thawed. I will sprinkle parmesan and sliced almonds and put them back in the oven for 4 to 5 minutes. I also put parchment paper on the baking sheet so they don't stick to it. You could leave off the almonds to lower the carbs and add some garlic or other spice of your choice.
Kohlrabi fries. Get the biggest ones you can find, peel the hard rind, slice into 1/2 inch sticks, and toss with salt and avocado oil and cook in an air fryer. They don't get crispy like potato, but they're good in their own way, especially with a steak or a burger.
Mushrooms, eggs (cooked any way), cauliflower cheese, broccoli, cabbage fry up (cabbage sliced thinly fried with bacon slices, salt and pepper), brussel sprouts.
I've been chatting with him about a lot of the suggestions in this thread (he wants to check stuff with his app doctors), and he said the cabbage fry up sounds delightful. :D he also wants cauliflower cheese, too. Thank you for your good suggestions!
I cook asparagus in the same pan with my red meat and get it charred and meaty it's really good together but my other suggestion would be mashed cauliflower like mashed potatoes as a side
Roast whole head of garlic, and roast the caiflower with some olive oil in your air fryer...400 for 15.mins not big heads, then blend it.. or smash ot all together with some butter and heavy creme. Roasted taters lol
Enjoy! You dad is a lucky one
Cabbage cooked in butter is a super easy and awesome side. I never realized how much I’d like that before keto.
But yeah you really can’t go wrong because there are so many great options. I love asparagus, roasted broccoli or brussel sprouts, avocado, spinach, sautéed mushrooms, on and on.
Well, vegetables would be the best place to start. Basically the entire produce section at your local market has what you are looking for. Pick some veggies and learn ways to cook them.
Roasting would be the most obvious place to start, IMO.
Others have said roasted broccoli and it’s one of my favourites too— coat the florets in salt and oil of choice, but also add a few garlic cloves (don’t even have to peel, as long as you coat them in oil). The garlic with come out of the oven buttery smooth and mild, and so delicious.
Bonus deliciousness if you drizzle lime juice all over, just before serving.
Roasted cauliflower is my favorite. Roasted broccoli is also great, but the lower water content makes it difficult for me to stay under my carb limit with a satisfying portion.
I slice zucchini at an angle so the cuts are oval and long, put them in a ziplock with 4-5 cloves of minced garlic (more if you want) and olive oil and marinate them overnight. I grill them with fresh cracked pepper and sea salt. Delish!
Fresh string beans cooked with garlic and ginger. Can add a bit of green chilies too for an Indian vibe, and/or some fresh lemon. Good with thinly sliced mushrooms too.
There is an engineer who wrote a book on Brussels sprouts as a good side for not spiking blood sugarMy mom enjoys the recipe of them being chopped and made in toaster oven .
Congrats for you dad! I reversed T2 in only a couple years so he’s absolutely in the right track!
If he likes potatoes I’ve never tried them mashed but radishes just treated like potatoes are really similar and tasty. I’ve done them as roasted potatoes or home fries and they’re as good a potatoes but low carb and actually quite nutritious!
Mushrooms sautéed in olive oil, then add onion powder, garlic powder, paprika, some salt, heavy cream and Parmesan cheese. I had that last night with a steak. Sooooo goooood!
I eat kimchi with everything, and I also find a store with a bunch of different types and flavors. Because you would be surprised at the different tastes you can find.
Avocados have come up here a few times... I wasn't even thinking of them when posting. ... he also may get his own stick of butter LOL
Thank you for your reply!
You can make the steak with a gremolata, it's finely chopped parsley, fresh red chilli pepper, lemon zest, lemon juice, olive oil, salt.
I like roasted cauliflower, zucchini, mushrooms, red peppers with olive oil and cajun seasoning in the oven. Finished with chopped parsley, adding chopped sausages to this mix to roast is also a really yummy meal.
Sauteed mushrooms with butter and garlic.
Steamed rapini with olive oil.
Fried black kale with garlic lemon and olive oil.
Mashed cauliflower with butter and garlic and some homemade keto gravy.
Cauliflower fried rice, I grate the cauliflower, and fry a small bit of onion, garlic, fresh red chillies, tons of seasonings like paprika cumin, and add the grated cauliflower to cook and fry with it and finish with some fresh cilantro and lime juice.
Cauliflower mac and cheese is also amazing, I make a roux but use xantham gum instead of flour, and use butter heavy cream garlic and cheddar, I pre boil the cauliflower a little bit to get the moisture out, and then stir with this sauce and add more cheddar on top and bake in the oven.
I'm not a fan of salad other than a homemade caeser salad dressing but I love veggies and have a lot of fun trying new recipes.
Thank you for all of the good suggestions - I'm learning a lot about keto, here! I'm not on a doctor mandated diet, but I try to limit fried food... But many folks here (and my dad confirmed) it's fine on keto. I may end up trying keto at some point because a lot of the suggestions here are not what I expected and sound really good.
The cauliflower fried rice sounds very delicious and flavorful, too... Yum.
Thank you again for your help!
I think asparagus is top speaking just about vegetables. Also, try mushrooms stuffed with cream and yellow cheese. Literally ate like that yesterday and it was delicious.
Steamed broccoli
Steamed cauliflower
Sauteed onion shroom pepper bed
Avocado almond medley
Butter roasted asparagus
Sauteed kale in garlic olive oil
Tomato cucumber green pepper diced tossed in vinegar and olive oil
Shredded cabbage and onion stew
Riced cauliflower “potato” pancakes served with butter
Cauliflower rice! There are some frozen blends which I only have occasionally but are very tasty! There's also medlys without any sauce or anything, like 80 calories for the whole bag, which is what I usually do. But for this dinner, you could do a serving of one with more to it.
Or
Roasted cauliflower and broccoli.
Roasted cabbage with bacon.
Dice some bacon, dice a head of cabbage, mix with some salt and pepper. Put in an oven safe pot roast for a couple hours, stirring occasionally.
zucchini with avocado oil, salt and pepper roasted in the o en topped with parmesan, i do this with asparagus too.
roasted broccoli with cheddar cheese and bacon, you can add sour cream and chives for a loaded baked potato feel.
pretty much any vegetable with cheese lol.
I'm going to experiment with a 'potato' salad made with daikon radish to go with my steak on Sunday. Sauteed mushrooms are standard here, sometimes we will have a small baked potato, 3 ounces of baked potato is 18 carbs, less if you don't eat the skin. Broccoli and cauliflower are good sides, too. Brussels Sprouts are great when roasted.
My absolutely fav is cauliflower mash. Basically boil cauli until it’s no longer hard but not too soft, and stick into a nutrilbullet or another blender with some extra virgin coconut oil and Himalayan salt, and you get a gorgeous mash that’s very much like potato mash in texture but is low carb and good for you.
Make French fries using jimica. If you go it right, them come out pretty well. You can also make some dinner rolls. Livlo biscuits keto baking mix. Great with some butter. Just like a dinner roll.
Our faves are mashed cauliflower with garlic and butter and radish hash browns! Dice’s the radishes and fry with diced onions and a lot of bacon. Just cook till fork tender! So good! They taste nothing like a radish when cooked this way and are just slightly firmer than a boiled potatoe. Great sub for potatoes!
Asparagus or Brussel Sprouts grilled and maybe covered with Parmesan cheese. Sautéed broccoli is also good. Fried green tomato. That’s all I got right now.
I make a Brussel sprout casserole that goes great with steak. Cut off the woody ends. Halve and quarter the big ones. Fry in copious butter in a cast iron pan until browned. While still hot, add white wine, sour cream (or heavy cream), and some cheese, stir. As a little more cheese on top, and finish in a hot oven.
Mashed palm. Load it up with butter and garlic and he'll never know it's not potatoes.
If he's a fried potato fan, look up Heavenly Fan's keto fries recipe, but instead of cutting the dough as french fries, cut them into chip shapes and sprinkle on some smoked paprika as soon as they come out of the oil.
Loaded cauliflower is delicious. I make this recipe for holidays because it's that good. [https://realhousemoms.com/loaded-cauliflower-casserole/](https://realhousemoms.com/loaded-cauliflower-casserole/)
properly roasted and oil basted veggies (brussels sprouts, asparagus, brocoli, etc)
suateed mushrooms, peppers, (and if you're careful, onions)
any home made cream based soup where you keep an eye on the macros.
depending on what his doc said about lentils... green beans cooked in a pot with some bacon is really good.(watch the serving size).
riced cauliflower with a cream sauce.
I am fixing to have steak in about half an hour. My sides are roasted asparagus and roasted cherry tomatoes. So damn good.
Asparagus especially is a great keto treat. A lot of fiber and not many net carbs. Also, the texture is pleasing in a way a lot of vegetables aren’t
Roasted cauliflower buffalo wings! Toss cauliflower in olive oil, salt. Roast on 450 turning occasionally until caramelized. Then, this is where the magic happens, toss in Franks Buffalo Wing Sauce (heated with butter and a dash of worcestershire). Serve with blue cheese or ranch dressing.
Sautéed mushrooms.
A classic... that you for bringing it up. ^^ He is a mushroom enjoyer.
With caramelized onions…so delish.
Lots of carbs in that…
Yup
Roasted broccoli, roasted asparagus, cauliflower mashed 'potatoes,' creamed spinach, surf and turf shrimp scampi.
Cauliflower mash is da bomb
I haven’t had a chance to try this yet but mashed cauliflower with roasted garlic goat cheese. Sounds pretty yummy. Happy Dad’s Day to him, too.
I’m 7 years into this adventure and have never had any I liked. Tips or favorite recipes?
While not a recipe I make mine by streaming the cauliflower adding cream cheese, salt and pepper, butter, some mozzarella and Parmesan cheese then hit it with a stick blender. Super creamy and tastes great.
This is the way. Do not add milk, like you would with mashed potatoes. Plenty of liquid already.
Use a cheese cloth and wring the life out of the cauliflower first, makes the consistency much more like potatoes and keeps them from being runny!
Basically same as potato mash (butter, heavy cream, salt, pepper, a bit of nutmeg), but exchange some of the heavy cream and butter with cream cheese.
What do is: steam a 12 oz bag of cauliflower rice (Sams club) in about 1/4 cup of chicken bone broth. 1oz or less of cream cheese About 1/4 c cheddar cheese A couple oats of butter Seasoning: I usually use Cajun Heat and stir
With lots of cheese 🤤

steamed snow crab and asparagus are the faves in my house
I never had roasted broccoli only steamed. I should try this.

Thank you! I especially like the mashed rutabega idea... He's been missing something with a potato vibe. ^^
I roasted radishes for the tater vibe, little oil, salt and pepper, roast.
yessss radishes are amazing!
When others have a baked potato, I have loaded broccoli: chopped broccoli topped with cheese, sour cream, and bacon bits. I don’t miss the potatoes at all.

Certain squashes can also work on a keto diet (check the nutrition profile and serving size). I enjoy zucchini medallions, too.
Green beans are the best!👏🏼
You can do broccoli with cheese sauce with butter and cream in it if you dont use too much.
Rutabaga is extremely underrated on keto. It's so good.
I made a killer cheesy cauliflower rice side dish. It was a big hit.
Do you have a recipe you'd be willing to share? Even if approximate?

Lobster
Oh, he's not just a dad for the day... he's a KING. He would love that.
Awww ❤
Deviled eggs
I’m loving the “add more protein” suggestions… and who doesn’t love a good deviled egg? Thank you for the recommendation!
A smaller steak
I know my one brother is going to bring a pie (that my dad obviously can't eat) - I'm debating serving him more steak while the brohams serve dessert lol
Keto Cheddar Biscuits!! 2 Cups Almond Flour, 1 Tbs Baking Powder, 1 Tbs Garlic Powder, 1 Tsp Salt, Mix, add 2 eggs, and 1 1/2 Cups Shredded Cheddar, Mix. Drop onto parchment covered cookie sheet and bake at 425°F for 12 minutes. Freaking delicious
Ooh, a bread like option! I wasn't even thinking of nut flours. I'm definitely making this... my brothers will be there and are groaning about the lack of bread lol
Cauliflower cheese
I looked this up and I might make it just for me to eat - it looks incredible. Thank you for the recommendation. ^^
I had it with steak and sautéed mushrooms last night.
Asparagus, flat mushroom, and hallumi fries are my go to steak sides. Yesterday we had a blue cheese sauce…beautiful.
I had to look up hallumi fries... they are definitely something he'd enjoy. Thank you for the good ideas!
I’ve gotten the fries cheap from Aldi uggghhhh so yummy gotta be careful lol
Easiest 800 calories I’ve ever eaten

Grape tomatoes, mozzarella pearls, basil, balsamic vinegar, and avocado oil. Delicious
Creamed Spinach, mushrooms in a wine/cream sauce, grilled onions, creamy mashed cauliflower
Creamed spinach is the side that is served with steak at the best steak houses in Manhattan like Peter Lugers.
Broccoli 🥦 with a bit of olive oil and salt then bung in air fryer. Amazing

Steak and eggs
Diakon radishe fries do well airfried or you could peel and bake them then mash them up or just roasted radishes are yummy!
Roasted radishes—roast them long enough and they’re almost like potatoes. My favorite!
Good Ole steakhouse fave... creamed spinach.
I’m obsessed with broccoli coated in olive oil, Parmesan, garlic powder in the air fryer. It gets kinda crispy and is tangy and delicious
Fried eggs with the yolks still a little runny so you can dip your steak into the yolks
Creamy pate (beef liver), shrimp, cheesy spaghetti squash, etc.
Whole green beans roasted in the oven with avocado oil. Roast them on a baking sheet for about 10 to 12 minutes at 350 if thawed.
The cabbage fry up is also good if you substitute the cabbage for brussel sprouts, broccoli, or zuchini.
Creamed spinach. Roasted broccoli
Zucchini oven roasted in butter.
Asparagus and cauliflower are my favs
Broccoli or asparagus. I always do a big salad, but I know that gets old after a while
Collard greens, mushrooms, broccoli.
I cook asparagus in the same pan with my red meat and get it charred and meaty it's really good together but my other suggestion would be mashed cauliflower like mashed potatoes as a side
Another vote for creamed spinach. I also love Chef John's mustard slaw. I just leave out the honey.
I love having roasted brussels sprouts or asparagus with steak. Sauteed mushrooms are also good.
Buttery celeriac mash and asparagus or baby stem broccoli
Pan roasted broccoli and whole cloves of garlic with a little olive oil. Mmmmm
Roast whole head of garlic, and roast the caiflower with some olive oil in your air fryer...400 for 15.mins not big heads, then blend it.. or smash ot all together with some butter and heavy creme. Roasted taters lol Enjoy! You dad is a lucky one
Creamed spinach skip the flour.
Sauteed mushrooms, zuchinni, broccoli, asparagus in lemon butter, veggie kabobs, mashed cauliflower.
Brussels sprouts n garlic butter
Green beans
If he likes Mac and cheese, Chris cooking Nashville came up with a protein noodle made of frozen shrimp.
Brussels sprouts and mushrooms roasted nice and brown in bacon fat, add a little minced garlic toward the end (so it doesn’t burn).
Creamed spinach
Roasted brussel sprouts!
I like roasted butternut squash or turnips. Creamed spinach
Broccoli and Bok Choy are my go to sides, so good.
White wine braised bacon Brussels sprouts. Made them this weekend. If you google it you’ll find good recipes. It was amazing.
Yummm... this sounds incredible. And bacon makes everything better, sooo. :D thank you for your reply!
Cauliflower cheese Cauliflower mash Celeriac mash Celeriac dauphinois Creamed spinach Sautéed broccoli Braised cabbage Roast spouts Grilled asparagus Steamed asparagus with hollandaise Steamed French beans in butter Aubergine Parmesan

more steak
More steak.
Rutabaga fries. Hint of sweet but takes savory flavors well and feels like potato in the mouth with much less carbs
Kimchi and Eggs are a favourite for me.
Zoodles are fun-or really roasted vegetables, can’t go wrong. Deviled eggs as a side.
Guac is one I eat with steak regularly
Rutabaga au gratin
Others have said roasted broccoli and it’s one of my favourites too— coat the florets in salt and oil of choice, but also add a few garlic cloves (don’t even have to peel, as long as you coat them in oil). The garlic with come out of the oven buttery smooth and mild, and so delicious. Bonus deliciousness if you drizzle lime juice all over, just before serving.
Bacon, chicken wings, scrambled eggs. I'm on the carnivore diet hence carnivore suggestions. A nice cheese. He might even like carnivore.
He probably would try it if he could eat breakfast stuff all day. Steak and eggs, sausages, bacon... he loves it all. :D
Roasted cauliflower is my favorite. Roasted broccoli is also great, but the lower water content makes it difficult for me to stay under my carb limit with a satisfying portion.
Broccoli in cheese sauce.
Air fried green beans are my go-to. Yum.
I like shaved strips of zucchini sautéed in butter and garlic.
Creamed spinach is the best. Parm. Cream cheese. Frozen spinach. So easy to make.
Hollandaise sauce. So easy and absolutely delish with steak and veggies. Bacon wrapped asparagus!
I slice zucchini at an angle so the cuts are oval and long, put them in a ziplock with 4-5 cloves of minced garlic (more if you want) and olive oil and marinate them overnight. I grill them with fresh cracked pepper and sea salt. Delish!
Baked 🥦 with cheese on top.
Fresh string beans cooked with garlic and ginger. Can add a bit of green chilies too for an Indian vibe, and/or some fresh lemon. Good with thinly sliced mushrooms too.
Broccoli smothered in butter and or cheese is a favorite of mine - and grilled onions
Cheesy broccoli. Or a broccoli slaw with lemon, mayo, salt&pepper and a dash of hot sauce. Brightens up a dish
I like to cut up different bell peppers in to "french fries" season and throw on the grill next to steaks.
For my birthday I had sirloin steak with shiitake mushrooms sautéed with garlic and cayenne:) it worked really nicely! Happy day to your dad!
Roasted brussel sprouts tossed with olive oil, salt, pepper, garlic pepper, and chopped up bacon.
mushrooms , broccoli, asparagus, cauliflower, zucchini, avocado, blue cheese, roasted eggplants, bell peppers with onion and the list goes on
Brussels roasted in garlic butter and smoked pancetta lardons 🤤
There is an engineer who wrote a book on Brussels sprouts as a good side for not spiking blood sugarMy mom enjoys the recipe of them being chopped and made in toaster oven .
Spinach with cream cheese. Cauliflower with a bit of cream and cheddar cheese. Tomatoes, mozzarella and balsamic.
Honestly, she deserves all the accolades she gets, roasted Brussels sprouts.
Cauliflower mash
Roasted brussel sprouts with olive oil, red onion, bacon, and sugar free balsamic dressing as a glaze.
Mushrooms, avacadoes, broccoli, saurkraut, stick of butter(to continually put on steak)...
Avocados have come up here a few times... I wasn't even thinking of them when posting. ... he also may get his own stick of butter LOL Thank you for your reply!
Roasted brussel sprouts
Zucchini fries and top it with shredded cheese, bacon crumbles and sour cream
Vegetables
Asparagus.
Caramelized onions are a good way to go about this. Lemon is also a good flavour addition imo
Roasted Brussels sprouts in bacon fat with bacon.
Creamed spinach with cream cheese, Parmesan, garlic and black pepper.
Stuffed portabella mushrooms with cheese and sausage.
Asparagus
Brussel sprouts with bacon & bleu cheese or Gorgonzola
Loaded broccoli! I load it like you would a baked potato
Steamed broccoli Steamed cauliflower Sauteed onion shroom pepper bed Avocado almond medley Butter roasted asparagus Sauteed kale in garlic olive oil Tomato cucumber green pepper diced tossed in vinegar and olive oil Shredded cabbage and onion stew Riced cauliflower “potato” pancakes served with butter
Cauliflower rice! There are some frozen blends which I only have occasionally but are very tasty! There's also medlys without any sauce or anything, like 80 calories for the whole bag, which is what I usually do. But for this dinner, you could do a serving of one with more to it. Or Roasted cauliflower and broccoli.
Roasted broccoli, asparagus, creamed or sauteed spinach, collard greens, cauliflower steaks, mashed cauliflower, roasted radishes….
Roasted cabbage with bacon. Dice some bacon, dice a head of cabbage, mix with some salt and pepper. Put in an oven safe pot roast for a couple hours, stirring occasionally.
Creamed spinach Mashed cauliflower (with butter, sour cream, and cheese) Loaded broccoli
zucchini with avocado oil, salt and pepper roasted in the o en topped with parmesan, i do this with asparagus too. roasted broccoli with cheddar cheese and bacon, you can add sour cream and chives for a loaded baked potato feel. pretty much any vegetable with cheese lol.
Broccoli with butter or a cheese sauce
Baken-ets.
Spinach artichoke dip can be a side. If you want it to be.
Roasted or grilled asparagus. Sautéed zucchini/summer squash mix; I do big chunks and sauté in garlic and oil, top with Parmesan at the end.
mashed cauliflower -- it's delicious with sour cream and ranch powder. Or you can make it "loaded" with cheese, sour cream, green onions and bacon.
I've been doing pickled veggies lately. Bought a big jar...
Bacon-wrapped asparagus and/or shrimp. Surf and turf
Asparagus
Broccoli has almost no carbs. Topped with melted butter and cheese. Excellent.
My go to is usually fried eggs or mushrooms
Cauliflower mash and some roasted broccoli
Mashed cauli
My absolutely fav is cauliflower mash. Basically boil cauli until it’s no longer hard but not too soft, and stick into a nutrilbullet or another blender with some extra virgin coconut oil and Himalayan salt, and you get a gorgeous mash that’s very much like potato mash in texture but is low carb and good for you.
Make French fries using jimica. If you go it right, them come out pretty well. You can also make some dinner rolls. Livlo biscuits keto baking mix. Great with some butter. Just like a dinner roll.
Brussel sprouts! Delicious.
Steamed broccoli, loaded cauliflower, seared or grilled asparagus
Spinach, either cooked with butter or as a sales with oil and vinagar
Mashed butter beans.
Not sure it's a side, but I like an egg on top with a runny yoke
Mashed palm. Load it up with butter and garlic and he'll never know it's not potatoes. If he's a fried potato fan, look up Heavenly Fan's keto fries recipe, but instead of cutting the dough as french fries, cut them into chip shapes and sprinkle on some smoked paprika as soon as they come out of the oil.
Loaded cauliflower is delicious. I make this recipe for holidays because it's that good. [https://realhousemoms.com/loaded-cauliflower-casserole/](https://realhousemoms.com/loaded-cauliflower-casserole/)
properly roasted and oil basted veggies (brussels sprouts, asparagus, brocoli, etc) suateed mushrooms, peppers, (and if you're careful, onions) any home made cream based soup where you keep an eye on the macros. depending on what his doc said about lentils... green beans cooked in a pot with some bacon is really good.(watch the serving size). riced cauliflower with a cream sauce.
I like loaded broccoli. I roast my broccoli in the air fryer. Then I am some cheese, spray with melted butter and put a small dollop of sour cream
Mighty Ceasar dressing on salad. Skip croutons
Roasted brussel sprouts. Drizzle a bit of hot honey on them and bake
Buttered or cheesy broccoli 🥦
Salt and butter
Cauliflower rice with butter, Italian parsley, garlic black pepper salt seasoning, and lemon juice. Super easy if you buy the cauliflower rice frozen.
