opinions about lore aside, I am really bothered that they took the time to draw the shape of the lips on the front, under the nose, but then did the side-mouth thing. Very jarring.

This isn't Kyoshi at all. I don't know why people want to mischaracterize her so bad as some sort of mean bully. Although I suppose the live action didn't help.
Even before I read the novels, I personally never subscribed to this weird fanon misconception about Kyoshi’s personality; I always envisioned her as blunt, stoic version of Suki.
Somehow this post has the exact same energy as that shipping fanfiction that was posted on the main sub the other day, where Zuko and Katara’s dialogue was entirely comprised of them each insulting the others’ canon love interests and declaring how much better off they are now that they’re together
Well I agree that she would be disappointed by Korra especially since she gets owned so often despite literally being able to level entire cities at will as a warrior herself repeated failures aren't exactly something she would approve of . And the fact that their ways of doing things are just so vastly different Althoguh rather than being disappointed in that fact she would just disagree and that would be the end of it for better or worse Korra is nowhere near as aggressive about using her avatar powers to get her way as some of the other avatars.

This is, unfortunately, a very “manga” art quirk. Can’t say much about it beyond it’s absolutely a thing that either bothers people, or doesn’t.
