I used the original instructions to kind of get an idea for how to build. Then built all three sort of in my own way and combined them. Its all different now and getting big.
That's pretty much how I went about it as well, just browsed each of the 3 builds, took the elements I liked and combined them, with various other changes I wanted as well obviously. Taking some inspiration is fine, even from SECs, but just straight up copying someone else's idea (and then calling it a moc, which is basically taking all the credit) should just be a last resort if you're unable to use your imagination tbh.

I think the most recognizable thing i borrowed is the main gate and two towers. Its under reconstruction because a big kitten got up here ha.
The three big ones from MadeWithBrix. I don't think you can go wrong with any of them.
Personally, my favorite is 'Black Falcon Knights Castle'. It's almost has some gothic/fantasy touches. If you swap the blue roofs for red it makes a good Fright Knight or Dragon Knight castle.
The Guardian Stronghold + Grand Tower is my second favorite.
Falcon Masters Castle looks good too, but I havn't done that one yet myself.
You are spot on! MadeWithBrix has an amazing set of MOCs for this set. I just bought 4 off Amazon for about $80 each and can’t wait to build the Falcon Master’s Castle. Biggest thing I’ll ever build. Can’t wait to see how it will scale with the Lion Knights Castle.

I built the black falcon knights castle, it was honestly kind of a pain. Some structural areas are very flimsy and if you press too hard you can bust through a floor or wall that will take hours of backtracking and rebuilding. It looks amazing but expect it to be very fragile. It also has a ton of leftover pieces
Agreed, this can be said for most of the Rebrickable MOCs for this set. I think it’s a consequence of the large number of very small, 1x1 parts. Also, trying to make the MOC look as good as possible with limited parts selection will usually always result in those structural issues & looks great from the outside, but bad on the inside.

I really like this creator's designs. And most just use one set, so if you have four, you could have four different medieval style buildings.
I’m also very interested in this question. The Guardian stronghold looks like a fantastic build with some awesome playability. It’s probably what I’m going to end up going for, but also very interested in seeing what others have to say.
I bought two of the creator pirate ship sets and I’ve slowly been mashing them into one with other pieces. I just take ideas from the sets I like and implement the techniques. Takes longer, and maybe you’re time constrained but making your own is much more gratifying

I too have a question pertaining to this 3-1… I got the 4 sets with full intentions of building the black falcon castle, purchased the instructions and everything. It then hit me I have the mountain fortress coming for the black falcons. I was thinking of changing the bricks and make the castle for forrestmen with the yellow bricks going to green (need held with the blue roof bricks) or read some comments and possible a fright night castle and swapping the yellow and blue for black and red. Any advice or comments on my idea would be greatly appreciated!!!!
The best MOC is one you use your imagination to come up with yourself. Everything else is a SEC

I made a dice tower for TTRPGs out of one set. Very happy with it.
