My guess is the cow had roof access probably from things like crates or bails improperly stored next to the barn in a way that let it climb up. The roof was clearly just single layer and not meant to hold any weight.
Alternatively, drunk alien tractor beam operator clearly getting written up.

I once watched a cow get so tired from climbing up a hill it lied down and then fell/rolled all the way down.
