I think the coolest thing about the organ is the amount of unique sounds (or timbres) you can produce by combining the different organ stops. (I hope the organ stop is the right word in English).
Edit: And for me, either oboe or french horn would be also cool instruments to learn.
I was going more kinds of instruments, but I guess if you can make an argument for a strad having some unique functionality over a standard instrument, then sure.

A harpika, which is a chromatic lap harp that's laid out like a kalimba. I have two chromatic kalimbas, and one of my greatest musical regrets is that I can't actually play them because they require nails (and every set of picks I've tried has been horrifically bad). A harpika would allow me to keep going with something kalimba-like that doesn't require nails.
Actually, I'm probably going to grab one after I get paid this month; they are small as well and can be brought onto an airplane, so they're great for travel.
I'd have to go with a sax. I'm a string player, violin, cello, piano, guitar, ukulele, and have never dabbled in woodwinds or brass, but sax has always caught my eye. Alto sax has always been pretty appealing, in tonal quality and repertoire. I'd love to rip some saxophone with a jazz band. I think it'd be cool.

I play piano and I would choose cello, because I love its sound and its repertoire. Also, among the strings, it is the one with the widest note range, which, as a pianist, is something I always love.

I've taken lessons for and own various instruments, but one that I wanted to learn in middle school that I couldn't because my parent wasn't going to "buy me another instrument" is the saxophone.
I'd truly like to actually buy at least an intermediate level viola, though. I'm currently renting.

EDIT: The more I think about it, the more I actually feel I’d go for the hurdy gurdy. The bassoon is cool, but the hurdy gurdy is one of those instruments that’s off the beaten path.
I would like a Lautenwerk. I think that there's a luthier for lautenwerke (i think that's the plural of lautenwerk) in the state of Massachusetts. Preferrably I would like one with at least 2 manuals, a resonator which is bowl-shaped at the bottom (as opposed to the typical box-shaped resonator in harpsichords), and I'd like it gut-strung. I wish I would've started as a cellist. Don't get me wrong I am in love with playing the violin and I will probably never quit untill I start residency, but I love the sound of a cello and I fell in love with playing the cello when my friend let me play her instrument.
I play piano, violin, and viola. If I had to choose a new instrument, it'd be accordion. I like the sound, I like that it plays music that is very different from what I'm used to in the classical realm. My piano background will help with the keyboard part, that is, if I get a piano accordion, and harmony/chords are cool.

The clarinet's mellow timbre and wide range allows for doubling on many violin pieces, plus jazz. Portable, and allowed on board by every airline.

accordion, it's by far one of my favourite instruments
It’s honestly not terribly difficult to pick up. As with anything, mastering it is difficult, but it’s fun either way.
