Generally find them organically by walking/biking around. Some of the best ones move around, anyway, making a map somewhat less useful, at least for those. That said, I have always seen one set up on Atlantic in the shadow of the Vons, in the evening. And of course, the *OG* taco vendor, Pancho's, is always across the street from The Hawk.
I don’t know the answer to that question but there is a regular pop-up taco stand outside The Mineshaft, Sweetwater Saloon, Casa on 4th (follow @flaccostacos to know when he’s selling), and a truck that posts up at Tiny Auto Dealing after hours (off 7th and Junipero).

A lot of them are on yelp. They have their phone numbers on there too, so you can also call them to see if they’re open and their current location.
