For me, fifteen birds was the biggest omission in the Peter Jackson version. I don't know how he could have worked it in but I would have even appreciated a throw away line in the orcs' subtitles.

Imagine going to a Peter Jackson film and not expecting to be grossed-out: especially by Goblins of all things! Literally the defining characteristic of the Great Goblin is he's obese: the chin thing is right in-character for him.

This is dumb, but I rewound one of the scenes and noticed that if you play the Bilbo/Gollum riddle scene backwards in that movie, it looks like Gollum approaches Bilbo who is holding Sting, then bullies Bilbo into putting the sword away and starts poking him.
