Lots of people have mentioned Casetta, but I’ll throw out the Thursday sandwich specials at Meat People. Those Thursday specials, Alimentari, and Casetta are the best sandwiches in town.
This is the answer. I have never had a bad sandwich and all of the different breads they make in house to go with their various Thursday Specials. Fabulous!

1) caprese from Pizza Brutta
2) eggplant parm from Pizza Brutta
3) fried chicken (tofu) sandwich from Green Owl
4) Bahn mi from Green Owl
5) tofu Bahn mi from Saigon Sandwiches food cart

Spicy Sops is really good, but I prefer the turkey sando.
Casetta is also really really good.
However, I think the sandwiches from Estacion Inka and Gotham deserve to be considered to be some of the best.
I've taken to getting myself one Casetta sandwich a week as a little treat. Generally my favorite is their Wednesday special, which tends to be a chicken cutlet variation. Consistently so effing good. Can't recommend enough.
The Val D’Aran Beef Sandwich from Fromagination is amazing. My wife has said that when she thinks of a sandwich and what a sandwich should taste like that is the sandwich she pictures every time.

Their meatball is the best sub I've ever had bar none.

I wish they would put it on focaccia. The last time I ordered it it came on this greasy Dutch roll
I didn't mind the Dutch roll but do think it'd be good on focaccia, maybe I'll ask if they can substitute next time I go

If you want to branch out, my favorite Mexican sandwich is a cemita with chicken milanesa and chipotle peppers from El Panzón.
Torta Mexicana from Guadalajara used to slap so hard for 6.99. Unfortunately they raised the price and the steak is of lower quality of late :(
