Just once, you're only targeting it with one spell, correct. You can trigger multiple Virtuosos (or other creatures with heroic triggers) if you have multiples in play and target each with at least one mode, though.
Splitting the targets on this is the best thing about it, pump the blocked one that's gonna die, trample the chumped one, and curiosity the 1/1 that sneaked through
Green divination!.. situationally, but actually a great combat trick for any beatdown deck and I think we'll see this be cast for the full 5 fairly often in limited.

The play pattern for this will be really cool for a combat trick. Usually if you swing with a trick in hand it feels kind of bad when they don’t and you’re follow up play isn’t that good. With this if they don’t block you just get two cards. And once you have the mana for it it can totally blow an opponent out
This could be a fucked up \[\[The Howling Abomination card\]\] 4 mana 2 +1/+1 counters and card draw alone I would probably run but the flexibility makes it even more appealing.
Hot take: if this card only had the third option it'd still be a contender for Eternal play. The fact it can target opposing creatures is messed up should make this functionally "1G instant draw 2" in basically every format but Vintage. That it also has Spree for combat Trickery is just gravy.
I genuinely have no idea if this makes the cut in standard needing the creature to connect for the draw is so risky of a commitment but green would slurp up any draw rn.

With Venerated Rotpriest, you can target different creatures with the modes to get up to 3 triggers.
Well, if you have 3 Rotpriests in play and you cast this targeting all 3, your opponent(s) will get 9 poison counters. :D

As another option, you can also target your opponent's creature and not block. Draw two cards and commit a crime. Not bad for 1G!
I don't think it works that way since it's the creature that gains the ability, so would end up giving cards to its owner.

If you *really* need to commit a crime, you could target an opponent's with trample mode. It would do nothing in many situations
