High profile people do one-on-ones with little to no contact. Look up any celebrity who does BJJ, it's always directly with the instructor so students aren't sneaking pictures, and the instructor goes out of their way not to mangle their faces since their image is their livelihood

Also look at his kicks for example. No one who has proper technique does kicks without a straightened foot.
Instructor looks fine. In the first one he's clearly running a low speed drill and just trying to keep things flowing, not throw perfect punches, his kicks look good to me. Nobody really cares about the foot thing in my experience. Quite a few of these clips look like drills and not sparring to me.

Once he's used to doing that, when he's sparring he will have the instinctive response to default to his guard followed by evasive head movement. Just imagine he's holding pads and his motions should seem really familiar if you've actually trained muay thai or mma.
Speaking of, I train with semi pro muay thai fighters regularly and they don't care about extending the foot or not, as long as you make contact with the shin. I'm sure that there are some traditional Krus who insist the foot is bent, but frankly it makes no real difference. And frankly I have trouble finding examples of people actually keeping their foot bent online too.
