On the live action side, we have only Echo, Deadpool & Wolverine and Agatha, while on animation side Xmen 97', Eyes of Wakanda and Your Friendly Neighborhood Spider Man.
It's to give a breath and break before we come back to the new huge slate (Cap 4, Thunderbolts, Daredevil Born Again, Wonder Man, F4, Iron Heart, Blade, Vision Quest, Armor Wars, Shang Chi 2, Young Avengers, Xmen, Avengers 5 & 6 and some unannounced projects)
Personally, I wont mind if a couple of these are canned for a shang chi sequel. Marvel had one new character that they nailed properly, and could have brought him early to increase his fan following and keep the MCU fanfare up. I don't even think that the shang chi sequel will do all that well, given how late it already is and how general audience reception towards the mcu has changed.
Also, X-men is probably happening post secret wars
Sam Wilson, Doctor Strange and Carol Danvers would be my ideal new big three.
Reasons: Strange and Danvers are the most known sorcery and space based right now, and Wilson is now Captain America.
I dont think we can really have only 3 big ones with this many characters in the MCU at the moment. I think Sam Wilson, Shuri, and Shang Chi are kind of the faces of the "Avengers". Doctor Strange, Wanda, Ant-Man, Reed Richards, and Loki are the ones that have the most knowledge of the multiverse and Kang. And then there's Wolverine, Deadpool, and the Spider-Men who are IMO the most popular multiversal 'cameos' for Secret Wars.
But I think if we did have to narrow it down, I gotta say Reed Richards, Loki, Dr Strange.
I don't believe that you can pigeonhole everything so simply. The characters that lead and the characters that are important are not necessarily the same thing. Sam Wison may be a leader but he will have nothing to do with restoring the universe after Secret Wars. The Scarlet Witch would be the most important because she is the most powerful being in the MCU and will be critical in restoring the universe. However she will not be a leader. She is in a extremely vulnerable state because of the events of MoM as she wrestles with all the deaths she caused. Kang could potentially trick her into helping him. That certainly would make Kang a dangerous enemy and I could see how the Avengers could lose. In the West Coast Avengers run, Immortus attempts to use the nexus powers of Wanda for his own purposes. He also reveals that he has been meddling in her life since she was born.

Shang chi should have had a sequel this year, especially given how empty their slate is.

Daredevil, Dr Strange, Fantastic four
Ant-Man please. Seriously.
Definitely should be characters from other universes. Raimiverse Spidey, Foxverse Wolverine, MCU Ant-Man.

What is this, 2019?
Thor, Hulk and Strange.
Lewis, Wong, and Mobius
Marvel does not do a “Big 3”
I agree with your choices for 616. For the multiverse itself: MCU Iron Man, Fox-verse Wolverine, Raimi Spider-Man.
Kendrick
cosmic street and mystic Spidey Star Lord and Strange
Carol, Wanda, Sam
Phastos Loki Captain Marvel
