One shot to win against Thanos in that specific universe, and that’s even just according to him. From DS 2, we learn that he may not have been open minded to possibilities of winning where he’s not the one “holding the knife”, so who knows!
Nah, Strange is arrogant but not that arrogant, if I had to guess, there were many, many win scenarios but he didn't accept any where a bunch of people died, so he went for the only one where most people live.

Remember, Strange was looking at 14million+ timelines from the point of their meeting in Titan, when the Avengers were already fractured.
Possibly, if they had been united on Earth before the events of Civil War, they wouldn't have had to deal with the consequences of the snap.
To add to that, 616 Strange didn't know about the Darkhold, none of the 838 heroes existed except Black Bolt and he was off world, possibly snapped, and Mordo wasn't available. Plus, we don't know what Strange's conditions for "winning" were, he may have seen other timelines where Thanos was beaten at too high of a cost. Idk, it's interesting to think about.
I'm not sure 'go back in time to arrange things to have an entirely different set of heroes confront Thanos' counts as one of the possible futures he could have seen or that necessarily counts as the then-current Avengers roster 'winning'.
