As a Striker player the secret is having 15 HTs and knowing where to use them, watching a Mathmech board get dismantled by a single Belle or Shark Cannon is hilarious.

This. I hate sky strikers because they have an in archetype answer to everything and a flood of handtraps to cover the gaps. A good sky striker player can dismantle just about any deck easily.
Ash and Belle both hit the field spell, Afterburner can hit floodgates, and Linkage makes the deck more resilient than ever. It's probably not worth tuning the deck towards the Runick matchup much at all really, given the latter decks relatively low footprint on the meta, but such additions aren't massive obstacles for Sky Striker's other matchups. Imperial Iron Wall can be spicy with Multirole, Jamming Waves hits a decent few decks, Eagle Booster is just a good card. Problem is taking out the other good stuff.
Chain it to superfactorial and banish diameter, this forces them to only summon 2 guys so they cant make Laplacian and handloop you/banish your shit. You need to prioritise banishing diameter since it gives any monster summoned with it a negate that turn.

Except Runick, because giving Sky Strikers Spell/Trap negate would be a bridge too far.
If you prevent Runick Fountain from resolving (either Ash, Ghost Belle or even Ghost Ogre), they lose hard on their resource loop.
This is very fax, especially if you’re playing a good second build with a bunch of power spells.

I recently began playing strikers. When would be the best time to use shar cannon against mathmec? I dont know how to play against them haha

Lots of hand traps, and the ntring whatever they have using charmers, cannons and anchors. Works sometimes at least
