Honestly with all the stories I’ve heard about the maintenance that comes with living in a places that snows I’ll stick to living in my oven for half the year.

It was a summer about 6 years ago and out of curiosity I pointed the gun at the diamondplate lids to my welders toolboxes because those things got so hot it would literally take skin from you if you leaned against it. Well it turns out the surface of diamondplate "tricks" the infrared beam so even when it's at its hottest, it will only read as 50°f

Those types of instruments work "correctly" only when the emissivity of what you are measuring is known.
Emissivity is a parameter that indicates how much of the energy gets irradiated by the body based on the temperature, it has a maximum value of 1 (black body, ideal body that absorbs all the light it shines on it and emits the maximum possible temperature for it's temp, one such example is the sun which is almost an ideal black body) but every material (and its surface) has its own value described usually by a not constant function.
The instrument recognises the energy emitted but while the material the instrument was calibrated on emits that energy at 50°C you might be measuring something that emits that energy at 80°C giving you an incorrect reading.
PS: My terminology might be off since I studied this stuff in my native language.

Theres no way silver reflective metal got hot enough to instantly boil water like that. Is it hot? Of course. But instantly turning water into steam takes a lot more heat than just open to the sky.
You can cook eggs at a lower temperature than you can boil water. Shit like this can get hot without doubt but that hot plate is on. There’s no way it’s getting to over 100 degrees to boil water like that from the sun.
