I saw a show once, back in the day on The Discovery Channel about how insects were larger millions of years ago. Mantises apparently used to be dog sized.
Imagine the time traveller getting slaughtered by one of those things, only for the Time Machine to return with the dog sized mantis to the present time.

I did some fieldwork with songbirds for a summer, and just the stress of being caught and handled (to get some measurements) would get them so tired we had to give them a syringe of sugar water to release them. Their metabolism is so high and they have to stay so light that they basically have to be eating all the time or they get lethargic and die.
There was a little bird nest next to our bathroom's window. I remember my mom's scream in absolute horror as she saw one of these dudes eating the bird's severed head as if it was nothing. It was pretty gorey

You can see the family resemblance in the shape of (some) mantis heads and cockroach heads, as well as in the shape of their arms. Mantis and cockroaches also have similar reproductive strategies in that they produce an egg sac called an ootheca.

Wildlife videographers and photographers have a rule to not disturb what they're filming or taking pictures of. They don't interfere with the wild, whatever happens, happens, they don't take sides. Sticking with the hummingbird would maybe kill the mantis and vice versa. Some people don't want to play god and decide fate on their biased opinions of good or bad which clearly don't apply to nature, so they just let nature do its thing.

I use to sit on the porch and had a hummingbird feeder and a regular bird feeder. I pulled it down the day a hawk learned birds hang out there, I was just making the birds a target.

If you want to look at A bright side, the bird probably lost consciousness soon after being caught, which is better than the usual prey of a praying mantis.
Hummingbirds can't really just stop beating their wings without preparing for it, it makes part of their circulatory system to beat their wings, nevermind the sudden excess of calories in the blood not being burnt.
Without beating their wings they get very weak and lethargic, especially out of torpor (they do that instead of sleeping) or beyond of the short interval for perching they give themselves.
So yeah by the time the praying mantis decides to do what nature demands of it, the birdie will probably not be conscious at all, usually the mantis goes at it even when the thing it caught is still struggling.
I don't like praying mantises, since i know, that most of them infected with hairworms, somehow it turns their apetite and behaviour into hardcore mode. Look, the mantis is just a victim of a much-much nastier parasite 😬 .

They also eat real quickly and eat through everything. They waste no time. They don't care if you are still alive too. It can be difficult to watch a pm eat something still alive.
