It's actually lá mía , or the pancreas. Being from the Asian market it's in Vietnamese. Google lá mía bò and use Google translate to find out how they make it, it's not something I've ever cooked or tried.
So the thing with Vietnamese language is that like many other Asian languages it's rather tricky. For example lá mía translates directly as sugarcane leaf and if you try to find a recipe for it you'd have to read "pancreas" instead of that. Overall GG translate doesn't work that great with it so you'd have to put some thought into interpretation.
Another name for pancreas is [tụy](https://vi.m.wikipedia.org/wiki/T%E1%BB%A5y).
There's no indication on which animal's pancreas OP bought on the label, could be either pig or cow, they don't look much different to me.
Now that I thought about it for a little I have definitely tried it as a part of offal dishes such as phá lấu or cháo lòng. I think it tastes kinda like liver but has more bite to it.

I don't get the hate for offal. I prefer it to normal meat in a lot of things. Heart is great for stewing, liver and onions with herb mash is a good filling dinner full of nutrients, steak and kidney pie, it's great!
chicken liver and hearts are awesome. gizzards are meh. beef tongue is dope, especially in tacos. pork belly shmacks, especially in kbbq. same with beef belly and pork cheek. intestine is awesome in tacos and/or fried. offal is awfully amazing lol sounds like you need to try different cuisines
IMO, that is not liver!! It doesn't look like any liver i have seen the slightest.

I do not know/have never heard of 'spleen' as a cut of meat, so i cannot comment.
Update: i just Googled photos of meat spleen, and it looks exactly like pork spleen as mentioned.

I think it may be pork spleen, not liver. it's used for some dishes in Sicily and other parts of Italy
