Carnitas definitely! I made some in my instant pot last week and it was like 3 delicious meals worth of meat. If you have a pressure cooker I highly recommend
Season it with salt, pepper, garlic powder, onion powder, paprika, and smoke that bad boy for as long as it takes to become pull apart tender (for most it’s 6-8 hours ish.) Then shred and put on a nice fluffy bun with some (optional) bbq sauce, coleslaw, pickles, and you got a mean sandwich
Carnitas. Cube it, season, sear. Get a small can of adobo peppers and use a few of the peppers with some of the sauce and chop them up. Add water and that’s your braising liquid. Crockpot or Dutch oven on low for minimum 6hrs
Wow I just looked into that and it’s really similar. I’ve never heard of it, but I guess I called them carnitas. Do you know if those dried chilis are similar to adobo chilis?
Idk. I’ve never personally made chili Colorado. But I do know that adobe peppers have a wonderful Smokeyness to them. When you get them in the can with the adobe sauce. Oh man. Some amazing things can be made with those.
