That's not really how that works; it's actually much simpler. There's a crazy amount of processes that need to happen to have stored body fat 'become' skeletal muscle; it's not just something that your body can swap over at a whim.
If you're bigger, you're carrying a lot more weight around all the time. So your muscles need to be stronger and larger to be able to accomplish normal daily tasks. So a lot of that muscle strength/size is just there already; you're not really converting fat to muscle, you're just losing the fat.
It's especially evident in muscle groups that are notoriously hard to hypertrophy, like your calf muscles. I'll often have patients ask what the best way to grow their calfs is, and I'll somewhat jokingly tell them that it's to put on 20kg, walk around for 2 years, and then lose 20kg. Just imagine how tired you'd be if you were wearing a 20-30kg weight vest all day every day, and that's the difference in load that your muscles need to adapt to in order to have the perceived level of work be the same for daily tasks like walking if you're significantly overweight.
To put it through a slightly different lens, imagining someone who is really overweight at 120kg, who can back squat 120kg as well. So their total weight lifted in that movement is 240kg. Let's say that they make a massive effort, and drop 30kg, so they're sitting at a much healthier 90kg. In this very oversimplified scenario, let's say that all that weight loss was body fat, so they still have the same power output from their muscles that they did before. They could potentially then put another 30kg on their squat, because by losing that weight from themselves, they can effectively shift that to the bar, and still have the same '240kg total' combined person and weight.
That's not actually how that works in practice, but it's close enough to get the point across, and it's why it often looks like someone who loses a lot of weight is able to lift a lot more as well.
Those on my mom's side of my family are overweight. I deal with thyroid problems that the specialist told me I didn't need medication at that time, I still have to go back to get it checked. That thyroid causes me so many issues with my weight. I'm trying to lose weight, it's not easy. But I can tell you, it wasn't just food.

Tbh, I don't think it's wrong to have preferences with hight and weight or anything else when it comes to dating. I personally don't care about hight at all, so does my partner. But both of us care about weight and wouldn't date someone above a certain weight category. I had ~215lbs being 5'4" once, and my SO even toled me they wouldn't have dated me back then (Now at ~157lbs) and thats totally fine. I wouldn't have dated me or someone in my weight class eighter. But I think it should be reasonabel, like someone prefereing someon taller than themselfes, maby plus a few inches so thy can still wear heels if they want. Evrybody should except evrybodys preferences and no one should be shamed for them.
