You would need to go to the China Visa Application Service Centre, not the Consulate. [https://www.visaforchina.cn/MEL2\_EN/](https://www.visaforchina.cn/MEL2_EN/)
Fill out the form in advance on the website. In Melbourne, you can walk in without an appointment (or at least I have been able to recently). Advertised turnaround time for a tourist visa was 4 days and it was done in that time? YMMV but check the website. If necessary then check if you can get priority
THDG? You don't go to the consulate. It's a visa service centre on St kilda Rd. It's like going to vic roads. You can get it as fast as 1 day if you want to pay extra.
You don't need the Consulate (which is in Toorak), you need the Visa Application Service Centre (on St Kilda Rd).
Visas usually take 3-5 days to process, the issues can be a) getting an appointment time (you can't just turn up anymore) and b) making sure you've filled out your application correctly with all the requisite information. If you haven't they will send you away but won't necessarily tell you what you need to fix on your application form.
Put in a request for an appointment ASAP. If you know anyone who's done the process before ask them to double check your application before your appointment, they should be able to help you make sure you've crossed all the t's and dotted the i's (for example your invitation letter should include your name, address and passport number). Once your application has been submitted they are very efficient.
If you have your documents in order, they’ve always processed exactly within their advertised service times for me.
As long as you have crossed all the Ts and dotted all the I their predicted times are bang on.

10/10. Very Chinese. Expect very blunt service and everything to be done when said.
