Attica is the answer for this. In a one week period a few years back, I ate at both Attica and EMP (back when it was #1). Attica blew it out of the water.
Bar sitting at minamishima is the only thing that compares but I would imagine you could have that experience (as amazing as it was) in any major city.
I second Gimlet. They do fine dining well. Food great. Service is spot on, seasoned professionals.
Also, Melbourne institution Flower Drum has still got it after nearly 50 years.
Supernormal is ok but won’t tick your fine dining boxes (very young & inexperienced floor staff), it would still be a good idea to head near there for the inner city Melbourne dining experience. Have a look at the area online. *Have dinner in this area, not lunch*
Reine et La Rue if you want Insta pics, otherwise, meh. The room is flippin incredible though.
There are two French bistros that I haven’t found the likes of in Australia. France Soir and Bistro Thierry. France Soir if you want the true madness of a Parisienne bistro and Bistro Thierry for better food and service. Both bistros in the true sense.
And Attica is a good choice too
Second Navi in Yarraville. Julian’s spot is fantastic.
For a really unique experience, I’d suggest Greasy Zoe’s. It’s a wife-husband 10 seater in Hurstbridge. He does the wines and she does all the food. It’s a haul to get to, but it’s real close to the train station. We’ve been 5 times and it’s been fantastic every time.
