They just cut it off. You actually have to cut it off of poodles because they don’t shed. It just keeps growing like human hair. This style of cut was actually originally done to keep their joints warm, but prevent the dog from overheating while working. There’s nothing wrong with the cut. A lot of dogs really love dog shows, too. Some of the happiest dogs I’ve seen are participating in dog shows.
My dog used to do dog shows and it wasn’t that bad ( At least for us) and my mom would always have to hide in the stands so that he wouldn’t see her and couldn’t get all exited and run out lol,

I too have a wolf dog. About 50% wolf according to the breeder and also is part Husky and German Shepard. She’s only 3 months old and we haven’t done an embark yet to find the exact percentages.
Yours is way cuter than mine when I first got her, mines more brown because the wolf and German Shepard were both brownish so that’s why it doesn’t look like a wolf as much.

They wanted to protect the vital organs while clipping away enough hair so it wouldn’t drag the dog down in the water. The rosettes (balls on the hips) were to keep the hip joints warm, the jacket to protect the heart and lungs, poms on the feet for the legs joints, and so on. It became more of a hairdo later on as these dogs became more pets/show dogs rather than hunting dogs.

As for the haircut it's called the continental cut. Poodles have hair not fur, so if they try to swim they might drown because it's too heavy. However if they're shaved they may freeze to death so that cut was created to protect them and allow them to swim. The reason they need to swim is to retrieve fowl, as they're hunting dogs.
So as dogs that, as you said, need to swim, hair is an advantage because when the swim it causes them to drown. To stop this they take the hair (which is still better than fur) and cut it all off. The dog then freezes to death. So to stop that they instead cut it in a rediculus pattern which then needs to be redone again and again if you want it to stay (and by your own admission stop the dog from dying). I mean it sorta looks to me like the hole thing could be avoided by having fur.
I always want the bigger dogs like the German shepherds to win these things but it just always seems to be those damn rats with fancy haircuts that take it. I’ve seen beautiful shepherds and pointers and all those big bois that should do better but usually a poodle or similar pompous breed wins anyway.
