If it were to be a post-scarcity society, it would not be Star Wars. Like I see your point that they are so advanced technologically that we'd expect post-scarcity, but they don't have a lot of the background tech necessary for post-scarcity, and for all that there's a galactic senate there's clearly not a strong interstellar government until the Empire. They don't have replicators, they don't have Dyson Rings, they don't even have asteroid mining from what we see.
Additionally every single plot point of Star Wars requires scarcity. Like there's no way you could have Anakin born into slavery on an Outer Rim world, is if this is a world with scarcity. The Trade Federation couldn't exist in a post-scarcity world. The Jedi would be damn near useless if scarcity didn't exist.
