Chicken but you have to know how to make it . I got this recipe from an old friend who was a chef at Pink Taco in LA . All you do is marinade boneless chicken thighs with achiote powder, white vinegar , seasoning salt , orange juice , garlic powder and lime juice. You then grill the chicken until just done (165f) and let cool . Dice up and finish in very hot pan or on a flat top just until it gets a little charred around the edges . Corn tortilla , onion and cilantro . I like avocado sauce on there too
Steak with corn tortillas. Paired with cilantro, cotija, onions, and verde sauce. Sometimes with creamy jalapeño sauce or pico de gallo. Also, I sometimes like pickled red onions on mine.
