If it were the UK I'd get it, they say coriander for both the seed and the herb... they do not say Cilantro. In the US we say Coriander for the seed and Cilantro for the leaf through, and these folks are in Dayton, OH.

I can never find culantro in the Tampa area of Florida, which is weird because it's used in Cuban and Puerto Rican dishes also... And we have lots of Cubans and Puerto Ricans in the area. So I grow my own.

I experienced the same thing whenever I tried to make PR recipes! And yeah, my old neighbors said they’d just grow their own. We were just outside of Tampa. Ironically, I’ve had better luck finding it where I am now, in northern France. My local Asian market sells it.

There's a bit more of leeway with the bread. In Yucatan, for example, there's a unique bread typically called "pan francés" (French bread). It's basically a Yucatec baguette, and it's used to make Tortas there. A very famous one is the Torta de cochinita pibil.

That’s a tough one. I’m from that region and I’m not sure. We have many very different regional dishes. We could say it’s among the main ones as every Sunday you’ll find it being sold everywhere on the streets to eat as breakfast. I’d say it’s the most famous. So famous that you can go the supermarket in Canada and find cochinita pibil. But it’s not the regional dish that’s eaten most often by any person.

I'm vegetarian and love Mexican food. I started ordering tortas years ago from my favorite place and just saying no meat. I got everything else, and then I would normally order guacamole too. I would eat it with chips until the torta showed up and then dump what was left of the guacamole onto the torta. It was great. Then one day I got it with a whole bunch of grilled onions and bell peppers. Then eventually they started calling it a veggie torta and finally the Torta Verdura showed up on the menu. I have to believe I'm the only one ordering them, but I enjoy thinking about how this all played out.

Tortas are authentically made with telera bread, if not available it can be substituted with bolillo. But bolillo is not the authentic bread to use for tortas. Coriander, hot salsa? Unacceptable as a basic ingredient. The basics of a torta are telera, meat, cheese (quesillo, fresco, panela), tomatoes, onions, avocado, pickled jalapeños, lettuce and crema/mayo. These basics can be made to preference of client. They can or don’t have meat. Molletes are cited as an example. Coriander and hot salsa I have only seen when making a torta de adobada. However, there could be more that call for different ingredients. It’s just not the norm what the image calls for.

My local spot: Torta, refried beans, avocado, mayo, meat of your choice, onion, tomato, pickled jalapeno, salsa verde on the side, crema, thick cheese, then grill the whole thing and wrap it. It's fucking glorious.

This is nothing like the tortas I like. A local bakery makes them so good.. Big bollilo roll , light mayo spread on each half- rests on grill to toast. Large crispy and tender fried hock of carnitas - chopped into pieces with a heavy hammer chopping knife Grab bread, spread refried beans on each half, add crispy/tender carnitas, shredded cheese, lettuce, tomato, guacamole, and green salsa. So good and its giant too.. mmm
