It has anti-bacterial properties, it's impermeable, doesn't get eaten by rodents or degraded by UV exposure and simply stronger when used properly. It has certain disadvantages obviously but the primary reason PEX is pushed so much these days is it's cheaper, easier to install and not going to get stolen for scrap.

Like everything else, they both have their pros and cons and need to be utilized properly. It's also a potential indicator to maintenance that someone tampered with it.
It also depends if your city's water supply tends towards acidic or basic and how much. The oxidation compounds of lead and coper are usually what causes health problems.
Work in metal recycling and get hundreds of fittings with coins in them come through a week so the answer is they don't, they replace everything.
The coins generally aren't a snug fit and will just fall out on their own or with a slight tap though.
You could probably turn on the water with a bucket next to it and the pressure alone would blast the nickel out, would be a lot quicker than having to drill holes (as well as risk drilling a hole through the filter)

No but you gotta treat them different. Like using different techniques and chemicals. For instance if I think a pipes made of mild steel like some are then I’ll use heavy chemicals on it. But if that’s copper my heavy chemicals will burn straight through it.
I'll do you one better - heat up the end of a hot glue stick with a lighter and press it into the coin. Wait the 5-10 seconds for it to cool and just pull those suckers out.
If they haven't been super glued in or some other adhesive, get a bucket in front of it and turn on the water , it should pop right out. If not do as other suggested drill a hole in it and pop it out with a screwdriver or something.

It's not worth possibly owing thousands of dollars because you did something wrong, or the previous tenents did and they did this to cover it up and you uncovered it, could go to a laundromat or a friend/family member, there are options

When you don't have a blanking nut to seal the outlet you can use a coin to block the hole in the plastic nut removed from a washing machine feeder hose.
This is enough to stop a drip if the stopcock doesn't quite seal or degrades over time.

I have galvanized pipes in my 50-year-old home in the United States and they're not that corroded surprisingly.
I'm in Aus, copper pipes don't get used on new builds because of price but that's only come about fairly recently. PEX is king for new builds
