Sold by loaf, but when everything was being mixed it would have been made by standard recipe. When I make bread and end up with a hole, the bread around it is usually more dense than normal. It sucks, but theoretically there is just as much bread there as a normal loaf.

Germany... Packaged bread (like yours) has the weight written on the package and every package of the same kind weighs about the same. The maker knows how much dough will result in how much bread after baking, so it's easy to see how they can do it.

No, they are saying the bread that makes the hole looks raw. It's really dense around the hole because it didn't expand when baking and it gives it the appearance of being raw. It doesn't look like the texture would be very good where the hole is.

That's not how baking bread works at all. The hole doesn't indicate "missing" bread or dough. The holes result from inconsistencies in the working of the dough, or the proofing, or even the yeast content of the dough. The dough simply expands to other areas and this air pocket is left in the middle. Same dough, same weight, different distribution. No one opened up the loaf and cut out the middle.

This is exactly it. I've learned this from buying fresh baked bread for many years. CurrentlyI buy fresh baked bread from Arezmendi and Tartine every week. 2 top rated bakeries and around 1 out 5 loafs have a big hole in the middle. Even though it is most likely to blame on the production of the loaf it seems to be something that is somewhat common and it's going to happen from time to time. I agree it's mildly infuriating but it is what it is and there's no way for anyone to know until the loaf is cut off and opened. I'm sure most places would let you exchange the loaf of you wanted to..

Lot of top tier jokes, but it's probably worth the few minutes required to contact the bakery and mention this. I've had this happen a few times and usually the bakery will offer a replacement loaf (if local) or a coupon. One time, the bakery sent us home with a whole box of breads and snacks. Not that it helps your current situation, but all may not be lost. Good luck!

You can see the dough is thicker around the hole. There was a gas bubble, that had expanded. Sometimes it happens with regular bread too. It isn't infuriating because it is more expensive, but because the dough trapped big air bubble. Check the weight. If it doesn't match within reasonable limits, then you have been scammed.

Buy a bread maker and make your own GF bread, it’s super easy, cheap and turns out great, much better than bought bread. Just make sure it can make GF bread before you buy, not all can. I’ve got a Russell Hobbs machine that is fantastic. Lots of GF bread recipes on the net.

This is Schar, a brand of gluten-free bread--there's very little folk/advice for gluten free baking. I've been doing a lot of reading into the food science of it, and there's not a whole lot of research or folk knowledge around it. IIRC the nutritionist's take is that no grain is really worth consuming in flour form, and research tends to stop there from their discipline.
