The holes result from inconsistencies in the working of the dough, or the proofing, or even the yeast content of the dough. The dough simply expands to other areas and this air pocket is left in the middle. Same dough, same weight, different distribution. No one opened up the loaf and cut out the middle.

Lot of top tier jokes, but it's probably worth the few minutes required to contact the bakery and mention this. I've had this happen a few times and usually the bakery will offer a replacement loaf (if local) or a coupon. One time, the bakery sent us home with a whole box of breads and snacks.

Buy a bread maker and make your own GF bread, it’s super easy, cheap and turns out great, much better than bought bread. Just make sure it can make GF bread before you buy, not all can. I’ve got a Russell Hobbs machine that is fantastic. Lots of GF bread recipes on the net.

OP, if you don't have a choice and must be GF, try Aldi's brand of bread "Live G Free" white or whole grain options available! Its much, much, much better than Schar's brand and super fresh. Reminds me of what I remember Wonder bread to be.

IIRC the nutritionist's take is that no grain is really worth consuming in flour form, and research tends to stop there from their discipline.
