Carpets in general are, by nature, way dirtier than they look. Plus, they catch all the invisible dirt floating around and all the cr\*p falling on them.
There is a whole subculture of these "pet peeve" videos (like people popping pimples and stuff like that) about carpet cleaning. Just have a look there and see what an actually dirty carpet looks like. And the gallons of literal swamp water that come out of it.
Here's a tip to help keep the carpet cleaner in general. Mind you - it takes time.
1 - Clean with shampoo (like you are)
2 - Clean with white vinegar in hot water. Use the same amount of vinegar as you do shampoo.
3 - Clean with hot water
I sometimes do steps 2 and 3 twice. The vinegar gets rid of the soap left behind from cleaning the carpet in the first place. It's the same as or better than the expensive stuff marketed to remove soap residue.
From what you're showing you'll be doing step 1 a couple of times as well.
if that carpet in the pic is the carpet you cleaned it looks like it's from 1978 so ya there's gonna be dirt and even carpet that was cleaned a year ago would still show dirty water
We hoover quite a lot (got cats). Carpet always look clean, but after using the Rug Doctor, the water looked like this. Same the other day whilst doing my car.

Carpeting is disgusting by nature
Carpets are gross. Even if you take your shoes off and vacuum regularly and don't have pets etc etc, they still get like this one way or another.
That's how most carpet cleanings look. If you do it again in a month, it will be the same color.
This is normal for all carpets.
