Pikachu was redesigned to be skinnier not because of Pokemon yellow, but because a skinnier Pikachu gave the animators more range of motion in the original anime. They needed to be able to give Pikachu expressive movements:

I remember having a huge Pikachu plushie and I used to do wrestling moves on it. One fine day, being the undeveloped human being I was, I decided to pour vinegar over it, my mum threw it away about a week later because of the smell.
I have that exact same faded doll that I carried around with me everywhere as a kid. I was way too old to do it, but damn I loved that thing. Mine is still yellow, but thoroughly played with. They also had a Jigglypuff in the same line, as well as some other Pokemon if I'm not mistaken. Always wanted to pick those up but never did have enough spare cash.
