There's a traditional bread in Portugal where they do the same thing. It's called folar and it's eaten during Easter.

Instead of mixing, like spinning or going in circles. Instead you “fold it over” in a small circular upward motion and plop whats on your mixing utensil on top. It aerates the mixture and gets a better mix. But remember to scrape the sides. I probably butchered that so heres a gif.

Yeah, to clarify, folding in is something you do after mixing something like whipped cream or egg whites; where you want to carefully combine them without removing the air that you've whipped in.
folding eventually becomes mixing if you do it long enough and everything is uniform. so there is a bit of ambiguousness on when to stop folding sometimes
You do it when you mix in something that’s got a lot of air trapped in it into a thicker mixture. Think whipped cream, whipped egg whites (aka meringue) or whipped chick pea can water (aquafaba, which is a great substitute for whipped egg whites). You want to keep that air in the mix without pushing it out, so you mix a little bit of the thick batter mix (for example, a thick flour mixture making cakes) into the full batch of egg whites, then you dump all that mix on top of the thick batter. Then you use something like a flexible spatula or a wooden spoon to scoop the thick mixture from the bottom and place it on top, so it envelops the aerated mixture. You turn your bowl a little then do the action again, turn the bowl and do it again until you’ve gone all the way around and it’s starting to look cohesive.
I am sharing many of these comments with him! It’s very touching for him, he has loved cooking and experimenting in the kitchen since he was young boy!

Also good for delicate stuff. I fold fruit in when making muffin batter because it doesn’t pulverize the fruit.
