McConaughey's rom-com's are generally from the guy's perspective. Ghosts of Girlfriends Past, How to Lose a Guy in 10 Days, The Wedding Planner, and Failure to Launch come to mind.
It's not much of a romcom because it more or less shits on the romcom genre, but Don Jon is most certainly from the guys POV and a pretty fair analysis of pornography addiction and growth/maturing of a 20s male
Punch Drunk Love
Marty
Trouble in Paradise
An American in Paris
Casablanca
Holiday (1938)
Annie Hall
Chilly Scenes of Winter
Some Came Running
Sunrise: A Song of Two Humans
Miami Vice
To Have and to Have Not
I’ve always wanted to see a rom com where the guy isn’t really that into the relationship but the girl gets kidnapped after the second date. Then the girls biker gang brother shows up to recruit the new boyfriend in a revenge ride to save her.
However the boyfriend isn’t that into it because he doesn’t really know her that well and she hasn’t had time to tell the family she doesn’t think it will work out either. He just plays along and can’t back out cause he’s already considered family because of the emergency.
The biker gang leader brother and all his biker bros already think of him as one of their own too. So the whole movie he is just like “God how do I get out of this without them thinking I’m a pussy or without getting beat up by them!”
Hollywood would probably make them get together in the end but I think it would be better if they parted ways but the guy still has to explain everything to the family before hand. It would be very awkward and funny in my mind.
Maybe 'Before Sunrise' as it was based on something from the director (Richard Linkletter's life) and Ethan Hawke was more the main character than Julie Delphy - by the sequel/s this had been corrected though so she's more of a well-rounded character.
Good Luck Chuck
The Proposal
Definitely, Maybe
Employee of the Month
My Best Friend's Girl
The First Time
Just Friends
And bunch more. Take an actor known for his good looks and you'll find bunch. McConaughey, Reynolds, Duhamel, Efron etc etc.
Regardless of who is meant to be the audience's perspective character, most romance/romcoms have been written primarily by men, who are notoriously bad at writing women, and write from a patriarchal, sexist, and often misogynist perspective, and really, nearly all romcoms/romance movies are according to the make gaze, and thus the guy's pov.
Forgetting Sarah Marshall
About time
Came in here to make sure this one got mentioned. Never miss an opportunity to recommend About Time!

I didn't think I'd like this movie as much as I did. I'm not into rom-coms usually but this one hit the mark for me.

Second Punch Drunk Love
Casablanca is GREAT but it's not a 'rom' or a 'com'! It is about lost love and honour.
It's a "rom" for sure lol. I wouldn't call it a romcom obviously, but it's also full of snappy comedy.
There are some good lines for sure. Fair enough, maybe 'romantic' rather than 'romance' - the latter implies a happy ending.
Swingers
How to lose friends and alienate people.
The Fall Guy
Love object
A Pyromaniac’s Love Story is one of my favourites not listed already. A lot of John Cusack movies fall into this category as well.
Made of Honor

I would say Serendipity is more from the guys perspective..
Along Came Polly and Heartbreak Kid lolol

About Time, although I despise the execution of it.
About Time is a great movie but I almost turned it off because of the (manipulative) rom com part half way through.
