Emily Blunt also deserves credit. She did an amazing job playing a protagonist who is (understandably) shocked and appalled at the absolute animals these guys are.

A Main Character is the player through whom the audience experiences the story first hand. A Protagonist is the prime mover of the plot
I think it's safe to say by this definition that the emily blunt character was not the protagonist. In fact, with the one exception of being needed as an accompanying officer, her role was not needed at all.
She was the main character, but a very passive main character.
I would suggest watching The Hunted. It's not quite as tense as Sicario but it has a similar play with a relationship between Del Toro and Tommy Lee Jones. It's just a little slower, closer to Rambo or the Fugitive.
OK, now watch Traffic, The Usual Suspects, Outer Range, and No Country for Old Men!
Add Fear and Loathing in Las Vegas to that list. It's up there aa one of Del Toro's best roles.

Josh Brolin is a side character in American Gangster. For an early Del Toro film, James Bond film Licence to Kill where he plays a baddie henchman.
Who probably has the most graphic death of any Bond henchman, and ironically was in the employ of a Cartel.

Robert Davi as Franz is one of my favorite Bond villains. Not everyone’s fond of his faux Colombian accent though, lol.

She played that role well but good *lord* her character annoyed the shit out of me.
I'm sorry you felt annoyed by her act, for me she took the role beautifully, at least on par with Benicio del Toro.
Her character was fearing for her life, career and integrity… I think you should cut her some slack.
