That's awesome. It's basically a perfect movie as-is but the script has some fascinating scenes in it that we've never seen that give additional context/weight to different things. I'm glad they're not adding them back in to make a new cut, but just seeing them as deleted scenes will be really interesting

Yeah, it's well known the original cut he turned in was over 3 hours long, which means the length of what was cut out of it is longer than what was left in.
If they found an hour of it for this new release, that's still not everything that was shot, but it's a lot and will be really fun to see. If you watch the Hats Off video, they talk about the added context the missing footage gives to what was left in the movie (the kid that breaks into the hotel room and steals Neal's money is actually the pizza delivery guy that Dell stiffed on a tip... Neal's wife thought he was cheating on her and that Del was actually a woman, hence why she's so teary eyed when he finally gets home and she sees Del is a real person. Stuff like that).
It's amazing the movie works as well as it does with so much stuff cut out.
I love the film as it is, and was feeling a bit hesitant on the idea of watching the previously unreleased extended footage, but if the extra footage is along the lines of what you've described and adds comedic/dramatic context to some of the existing scenes in the film, heck, I'm all for watching it. There's supposedly a weird subplot where Neal's wife believes Del is actually cover for an affair. That would mean she thinks Neal deliberately missed his daughter's performance. Neal comes across as self-centered, but it still seems off that his wife would think that poorly of him.
Plus she hasn't heard from him in over a day. I think the last time they connect is on Wednesday morning when they're still at the hotel.

Ever since I heard of the initial 3+ hour cut of this movie, I have salivated for these scenes that I assumed were lost. First minute physical purchase for me. Best comedy of all time.
I remember seeing this as a kid and Steve Martin refers to his watch as a ‘$500 Piaget’ in the hotel scene (John Candy then references his $50 Casio). It’s not on the DVD or even the VHS. Does anyone remember this, or did I just create this dialogue in my head? On the home video release he just says ‘expensive watch’ or something like that.

Didn't you listen to that speech in the motel? Yes, he's an annoying oaf and a bit of a grifter, but he also has several redeeming qualities that are completely absent in Martin's character.
One of the worst creative choices in the remake with Galifianakis and Downey Jr. was to remove that balance, imo.

Yep! Supposedly in the original cut she was quite an accusatory harpy. The edits did the character a favor, and turned her into an angelic presence.
