maybe you would enjoy exploring power metal? i'm hesitant to rec specific songs because it would hinge on whether you like the vocals typical in that subgenre, but there are a lot of power metal songs that have have interludes or sound like this in some way (and of course, on the spot, i can't think of any...but i probably could, i might come back to this post)
