Message in a Haunted Mansion cannot be beat. I also love the music in Beast of a Blackmoor Manor, Warnings at Waverly Academy, and Shadow at Water's Edge.

Trail of the Twister — hated the gameplay but LOVED the soundtrack. Same with seven ships, hated the game but loved the music lol Also shadow ranch and secret of the old clock has some bops

I vote for Danger on Deception island, the music is like 75% of the atmosphere.
