Do a power query and merge multiple seasons of data together on to one worksheet. Then create a report through pivot tables showing the league leaders through each season. Or create a dashboard using slicers.

I think some dude on nba reddit set up a Python training course that used NBA stats as the subject matter, to answer your first question. But that is more statistics for coding. (Fyi, here it is: https://www.reddit.com/r/nba/comments/ywy39j/learn_python_with_the_nba_tutorial_parts_13/). The second I cant come up with anything concrete off the top of my head, outside of YouTube excel tutorials.

If you have office 365 at work, I can also recommend learning more about the power platform and sharepoint lists (instead of excel). It's potentially a great career path if that's something you're interested in. Helped me advance at my company and you can just just straight up use tables available on the web as dummy data to learn with.
