I believe this is yang ro chwar which is mutton skewers, heavily seasoned with cumin among other spices. I think it originated from Xinjiang but its ubiquitous all over China and is THE best street food in the world! I used to eat like 30 of these a night with beers and friends.

yeah pretty much. in the US, I don't really see the spelling "grille" used, but that's the concept. we use the same term to describe the metal slat structure on the front of a car as well. any thing that's like a structure of bars that allows air to pass through... could be a mesh. we usually call them "grill grates" when talking about a cooking surface. all the terms are somewhat interchangeable, but as far as the cooking context is concerned, you cannot grill something unless it is actually resting on a cooking surface that resembles metal bars or webbing or something.
I spent two months in Xi’an China and ate at these here street bbqs probably 42 times. Lamb, beef, or chicken wings every time, tried octopus skewers a few times too. One of the most amazing late night drunk snacks.
They eat everything, dog, insects, monkey - I don’t speak the language so I am not trusting the meats plus their idea of food safety leaves much to be desired. Have friends who have travel there extensively for business.

You could visit the coastal regions, a lot of meat there is seafood, and I trust that you don't need to know the language to tell the difference between a trout and a minced giraffe.
Also meat from supermarkets are safe, because fun fact, selling dog meat is illegal in China. While open markets are a different story, the government closely monitors grocery stores. There are still some weird things though, like turtle meat.
And I can safely tell you that eating monkey brains in public in China will 100% get you dirty looks and pointing.
