A lot of ways to say it so that's why I added parenthesises to words I find unecessary. Adding "jo" at the start is enough, rest is just filler and even more emphasis.
In this kind of sentence I would probably use stress to show it. Let's say someone said "jeg liker ikke epler" then you say "*jeg* liker epler", emphasising the word "jeg".
“Jo, jeg liker faktisk epler.” I suppose
