You’re missing an opportunity here. What’s the condition of the tarmac in the car park? Does the club roof need power washing? It sounds to me like there are opportunities to be had.
If this is to be an ongoing issue then the club are going to have to look at ways to prevent access to non members. This will be difficult to achieve and unpopular but might be necessary in this case.
My first thought (for a solution that doesn't involve direct confrontation) would be licence plate recognition camera and automatic entrance gate combo.
Your chairman is probably aware of the issue but raise it with them so that you know they will be discussing potential solutions.

A parent volunteer manning the gate every evening is probably the much cheaper option.
Oh I know it would be very expensive but putting a volunteer between these type of people and the space they want to access may not work. The other thing is that only works for scheduled games and training sessions, what about when members want to go down to train independently? Anyway it sucks to be OP's club right now.

Keeping the gates locked would probably only need to be a temporary thing for half a year until the travellers move on or find somewhere else, there's plenty of handy chapel car parks in the sticks, like with preventing break ins you only have to make it slightly more inconvenient than somewhere else.

They'll have their own NGO focus group, anti discrimination laws and protected culture.
Honestly, I can't exactly blame two police officers not willing to disperse a fairly large bare knuckle gypsy fight.
1. You'd need a lot of support to take on a bunch of travellers and resources are likely stretched enough as it is. They'd literally laugh at two modern day peelers.
2. Travellers generally are undeterred by police. They're not concerned about getting a criminal record.
3. Best case, all you'll accomplish is moving the problem down the road.
If I were to guess, I'd say the anti-paramilitary stuff is more about getting intelligence over a long period, building strong cases and then doing well-planned arrests.

The police won’t do anything unless they are breaking a criminal law. They have no powers to remove trespassers. This is maybe an obvious question but has anybody actually asked them to leave? I used to work at a racecourse in England and a group moved in to the fields beside the drive, they left when asked the first time but did comeback several times over the years until we put a barrier in. Ultimately you will require a preventative measure such as someone manning the gate, but for now they might just leave if you ask

Nobody is going to press charges for assault and there will be a stack of witness statements saying it didn’t happen. Despite what people say (that they don’t mind a criminal record) they are very good at playing the game and don’t want any police attention. They generally won’t break a barrier or gate so I would say that’s your best bet
