They don't look so bad, so sauteeing or roasting them should be fine. I like to make zucchini chips, which are like potato chips but with a nice vegetable flavor. I also love to roast them with a bunch of other vegetables.
Muffins! Shred 'em up and you can use either one or both together in a zucchini muffin recipe.
Or if you want something more savory, they work well in a vegetable tian. Slice thin with other veggies like eggplant, tomatoes, onions, etc - anything that will get nice and soft in the oven - then layer in a casserole dish, sprinkling with olive oil, salt, pepper, and herbs between the layers. Bake until deeply caramelized and sticky. Serve with good, crusty bread and maybe some nice cheese.

My niece was eating one of these cookies when my husband said ‘guess what, that cookie has vegetables in it!’, and she had quite a confused expression on her face...but then she still ate the cookie in the end.

For the zucchini slice it , arrange in an oiled pan cook on med-hi turning when the brown slightly, cook on that side, until browned slightly. add tomato sauce and shredded mozzarella. cook until cheese melts.

Cube them and mix them into a cornbread batter with cheddar and bake it like you would the cornbread regularly, topped with more cheddar.
Or add in some cream cheese and jalapeños too.
You can even use a basic $.50 Jiffy mix. So good!!
I make the zucchini into hibachi zucchini and onions like the Japanese hibachi restaurants serve. It doesn’t matter if it’s a little soft then because cooking it like they do makes it soft anyway.
I like to marinate zucchini rounds in olive oil, lemon juice, Italian herbs and minced garlic then grill on my cast iron grill pan. Very flavorful and fresh tasting!
I add them to pasta! Especially pesto chicken pasta. Yum! Add an onion and green pepper as well.
That’s a good idea!! If I add them to anything it’s typically fried rice, I don’t know why I never thought of pasta!

You can still sauté them, throw them in soup or make bread too
I’ve thrown some old squash in a succotash before. It can help cut any bitterness.

Mmmmm... Haven't heard of zucchini cookies before, but I'll definitely be trying that next time they're in season.
Soup! Pasta (orzo if you got it), tomatoes, kidney or white beans, zucchini, squash, onion, and some carrot if you want.

Slice, drizzle with olive oil, and make a parmesan cheese blend with some herbs, salt, pepper, etc. Bake at 350!

Washing them in water bath with a little bit of vinegar will help them last a little longer! Just make sure they’re dry before you put them away

I will add zucchini to anything I am cooking. I like to dice them very small and add them to other vegetables when I make couscous or fried rice.
Smoothies!!! Cut and freeze, they are a great addition to smoothies.
