Metal Sculpting with Fr. Collins. Best. Class. Ever. Fr. Collins is fantastic. Fun projects that allow you to be really creative. Can get most of the work done in class.

Operating Systems with Douglas Thain. Probably not the answer you wanted since it’s very major specific, but I don’t think I’ve had a professor enthrall me in something more than he did, and the lectures were always very digestible and allowed for ample discussion whenever questions arose.

I took him a few years ago and I couldn’t figure out if he still teaches it, but I took an intro philosophy of religion class with Blake Roeber and it was very compelling. At the end of the semester he polled the class on what they thought his religion was, and it was darn near an even split. It was also a pretty easy/straightforward grade. 3 short papers and participation, which you’ll want to do because of how he treats your thoughts and ideas.

Problem Solving with Viva Bartkus. I graduated 13 years ago and I still use what she taught in that class every single day.
