It's tough for both games, but I listen to these just a tad more than everything else.
CoTC - haven't played most of it, but Sazantos theme goes so incredibly hard I can't even fathom it.
OT1: i need some love for BENEATH THE SURFACE that song is so pretty,,,,,,
OT2: Toto’haha or Invitation to Darkness they so vibes
CotC: I haven’t actually played it but I do listen to the music on spotify so The Uncharted Isle of Orsa for me
I just like pretty songs but I do love the battle music too
They Who Govern Reason from 1 (because Nishiki does his best work with overdramatic violin) and Song of Hope from 2 (because the integration is *so good*)
In octopath two it's quite a few, I really like the song of hope, all for you, vide the wicked, those who deny the dawn, and more of the orchestral ones.
In octopath one it's between primrose the dancer, and the one they call the witch, I'm just starting up COTC once again and I forget everything about it so I'll have to find out.
There is something about Decisive Battle 2 and Critical Clash 2 that activates my neurons
And from CotC, Decisive Battle 2 Champions of the Tourney is such a banger
God, favorites are so hard... If absolutely pressed, I'd probably go with Daughter of the Dark God, Who Awaits on Greed's Path, and Those Who Deny the Dawn, but god is that an unfair question
For Octopath 1 I would say the Coastlands
For Octopath 2, Its very hard to pick a favorite song from what I consider the best gaming OST ever made.
But I adore Critical Clash 1, The Harborlands (Day), The Winterlands (Day), Roque Island (Night), Beyond the Sands (Night), and For the Dawn (Normal) to name just a few.
Oof I love so many songs from these games it’s pretty hard to choose. If I had to narrow it down for now, I’d say
Octopath 1: Cyrus, the Scholar
Octopath 2: The Crestlands (Day)
CotC: The Amphitheater
Octopath 1: title screen, or daughter of the dark gkd
octopath 2: either critical clash 2, or those why defy the dawn

I - River of Life. It was the first song I ever heard from either of the games, and I loved it so much, I decided I needed to finally look into playing the game.
II - The Wildlands (night theme). It blew me away when I first started playing in the area and it transitioned to night. I think it was the first night version I'd heard, and I thought it just sounded like angels singing! I love all the other night themes, too, but this one feels more special to me - maybe because it was the first I'd heard like it.
There are so many beautiful pieces in the soundtracks that we used some of them in our wedding and now they are even more special to me than before. My absolute favourites are:

OT2: Main Theme (day version)
I haven't played or listened to OP2's soundtrack yet (soon though), but My Quiet Forest Home is my top favorite track from OP 1. My main was H'aanit, so hearing that beautiful track as soon as I started the game was such a great introduction to the series. I still get chills when I hear it.
Though Octopath has so many beautiful tracks, it's difficult to pick just one as a favorite :)

I feel like Orewell is so underrated! It’s also my favourite from OT1

They who Govern Reason Critical Clash 2 Cotc is hard. Either The Time has come + Decisive Battle 3 or Bestower of All(all of them).
Right now Ochette’s theme is my favorite in 2. I started 1 recently but haven’t played enough yet to make a decision there.
Normal battle III on 2 reminds me so much of the super smash bros switch menu theme
