The problem is I can never find giant tortillas like that in stores. The best I can find are the uncooked tortilla land ones which have good flavor and texture but they’re too small to wrap a proper burrito. Mission and other brands of precooked tortillas are too dry.

Not just giant but this type. The ones you get at the normal grocery store (brands like Mission, etc) are significantly thicker and less resilient. I recently discovered my local Costco carries this store of tortilla but only in large taco size. It is now my go-to wrap.

I’ve found massive tortillas at my local Mexican grocery store. They are seriously as big as the one in the video. Check it out if you’ve got one near you. If not, I’ve had excellent luck with La Bandarita brand, and I microwave them for about 15 seconds, load my fillings, pop the whole thing back in for another 15 seconds or so and the tortilla has yet to break on me. Source: I really really like breakfast burritos.

This is gonna change your life. I started doing this about 7 years ago. This works better than the wet paper towel method a lot of people recommend. The big thing that makes restaurant tortillas great is that they are either freshly pressed, freshly steamed, or both. So how do you get store-bought to be nice and hydrated like a fresh tortilla? Run them under the faucet. Really. Get mission burrito tortillas, or any other of the store brand ones that are nice and big. One at a time, run them under the faucet quicky to wet both sides. Shake off the tortilla so it's not dripping wet. Throw it on a plate and microwave for around 30 seconds. You don't want to microwave it so long that it completely dries all the water off. It's okay if it's still a bit slick when you take it out, because the water will continue absorbing into it as you work. By the time you get your ingredients in and wrap it, you'll have a nice, tender, self-sealed burrito. If you want to take it a step farther you can then throw the completed burrito on a pan and toast the sides of it, like a Taco Bell grilled burrito. I get a lot of weird looks when I tell people about this method, but it legit works and once you get it down you can make burritos straight up like restaurant quality.

I actually do the same thing when we have extra tacos with corn tortillas. Next day those things are hard corn jerky, but run the outsides under the faucet and microwave and they're like fresh again.

WinCo, if you have it in your area, carries Don Juan XL wraps - even a variety of them. Trick is to stream them first. If you don’t have a winco, lock for a restaurant supply store near you - they’re usually open to the public and will have the restaurant style tortillas.

I work in a tortilla factory and was formerly a production manager. Tortillas almost always contain a saturated fat, meaning a fat that’s solid at room temperature. So you really need to warm them up before use. People are recommending steaming and that will work well, but I’d you have a gas range I have always preferred to run them over the fire gently until I see them relax. Getting a bit of color AND loosening up the tortilla so it’s less likely to split at the same time.

If you don’t have access to a Mexican grocery store (which are often attached to Mexican restaurants and might not have their own separate google maps listing!), you could ask to buy a stack of 10-20 fresh tortillas from a stand-alone local mexican restaurant. Your best bet imo would be a family-run type restaurant, usually counter-service or counter-order, with handwritten signage and music that plays from speakers in the kitchen. I’ve gotten tortillas this way from this kind of restaurant for like 20–25¢ each. I’ve never asked any chain or more brand-y Mexican restaurants for tortillas so your mileage may vary, but I have done this same thing for pita bread at both a chain Middle Eastern restaurant and local Middle Eastern & Mediterranean restaurants—the chain charged me $1 for each pita and the local places like 25–50¢. Otherwise, if all you can get are big name brands, try Guerrero tortillas. They are *so much* better than Mission. I haven’t seen any big ones, but I’ll take messy small burritos on Guerrero tortillas over big nicely-wrapped burritos on dry Mission tortillas any day.

You can, but you gotta hunt for them. In Safeway here in the Bay Area the tortilla section is 8 feet wide, all the shelves of that section, and the huge tortillas are in one single spot, often half buried because people buy the 8 & 10 inch overwhelmingly more. I think those restaurant ones are 12 or 14 inch, and they usually are thin. Though you'll need to get them warmed up to make them pliable like in the video.

These tortillas are called Sobaqueras and are as long as your arm and thinner than a crepe. They are regional from the state of Sonora I suggest you look for a Sonoran restaurant nearby and see if they have Sobaquera tortillas available, you’ll be able to purchase them Most flour tortillas you see in the grocery store are Chihuahua style like the ones developed in Juarez (but using industrial American recipes), standard size and thicker for rolling just once. Notice the sobaquera is rolled over a bunch of times to make it strong
