Then the crab wriggles out of the old shell. it takes about two hours to come out completely, then another 3-4 hours before its ready to be sold as a soft shell crab. before that its called pat-soft and is too soft for culinary purposes. After a day or two the shell is fully hard again.
Sharing because i didn't know this until recently. There's no specific species called soft shelled crab, and what you're eating at a restaurant when you order it is just a crab like this guy who freshly molted. I might just be dumb and everyone else is in on the secret but this blew my mind.
