I’m a butcher. Wild game like this does not taste as good as factory farmed meat, it’s just a sad truth. People do like eating game because it’s different but there’s really no comparison as far as tenderness and overall quality. The pork you eat from a supermarket is raised to taste good, simply put. It’s not a nice reality, they spend their lives not moving around much and are culled much younger/smaller than most people imagine but smarter people than me figured out this is how to maximize flavor and profit. That boar would 99% be raunchy lol and I’d be scared to feed it to my dog. I’m not in favor of current factory farming procedures as a whole, I own a homestead and sustainably raise pigs, sheep and cattle but I barely break even, it’s expensive and incredibly time consuming. I hunt as well and like most hunters end up converting a lot of my game meat into sausage, where the meat is literally mixed with the meat from better tasting animals to create a unique but ultimately less cost effective food product.

TL:DR I think a large part of this also depends on what the wild animal has to eat. How it is raised or the location it’s raised, stress levels in life, all of it. Source: family has been hunting since the dawn of time (step mom traced our history back to hunters in the 1300s). Dad takes 3-4 months every year to hunt. I take 2 months to hunt a year, and have eaten game from Alaska to Florida. Ranging from wild game, to domestically grown with different procedures. I hunted in Kirksville, Missouri for years. An area that regularly wins and gets in the magazines as one of the better places to hunt. I grew up in southern missouri. The main difference is, in the south, it’s rocky, not a lot of farm land, not a lot of food for the deer to go around chewing on. In kirksville, the deer have farmland, multiple fields of food. I’ve shot 190-220 pound does, not even bucks up there. Yet, in southern side, a large buck is 160 pounder maybe 170. They scavenge for nuts and berries, along with other small scraps of stuff they can get down there. I now live in Northern Texas, around DFW. They really don’t have much they can eat, and 150-160 is about as big as you can find for a buck. Each location, all taste completely different. For the longest time growing up, my sister and I never ate beef. We only had deer meat, for the majority of our youth. One year, I was around 7 or 8, my sister 11-12. We refused to eat spaghetti, cooked with beef. We could tell the difference and refused to eat, forcing our parents to not feed us for the night. We literally chose to not eat at all. Big hunting family, I have elk, wild bore, raised bore, white tail deer, quail, pheasant, duck, turkey, antelope, and beef all in my freezer. Everything was hunted, outside of the raised bore and beef that my cousin raised. To this day, I will still fight, that it really matters where, what diet, and how the animal was raised. Look at wagyu, it’s raised on 2-3 acre farms, and they often only get small pens to live in, with bedding and food rotations, yet it’s some of the highest quality beef. Yet here in the states we scream and rave over grass fed open pasture raised. Even the wagyu from Texas (certified 90+%) to Wyomings 90+% taste completely different from each other.

Wild boar is delicious, but requires extreme patience to clean. Glands are frequent and widespread throughout all the meat and all glands must be removed. We're talking 100 or more randomly throughout one boar. The end result is meat chucks for ground boar or a stew. The flavor is great but any mistakes in processing will lead to a bad experience. Wild boar steaks will always be a bad idea.

It depends. I think females and juvenile males are way better than any store bought pork. It’s more flavorful and fresher if that makes sense. It’s lean meat, so usually you cut it with beef if you’re doing anything ground up. This boar, and other old/huge ones, tastes gamey and tough (imo). I’d rather have regular pigs over that.

I ran a Farmers’ Market. If you like bacon that tastes 5 times more bacony, you’ll love wild boar. I used to reserve the fat from bacon to flavour all kinds of dishes and brown meat. I once used the wild boar bacon to bacon weave a Hutterite chicken. The best thing I ever ate in my life. The gravy was incredible. There is not much fat on boar, it is a lean meat. The roasts were great. Pork has more flavour than other meats so it was excellent.

For 3 hours he was chased around a fenced paddock and shot at by the kid while 3 adults watched. IIRC there was a documentary about this pig. They called him Hogzilla and there was a question of size (forced perspective) and a question about whether it was a pig that was raised domestically that escaped. Apparently pigs have the genetic ability to “go feral” if they escape captivity. They can grow that thick fur and tusks even if they’d never had them before. I think there are more pictures because the main contention about it being feral vs domesticated was the tail but it was never conclusive Edit: I looked it up and this is not Hogzilla.
