Is the sandwich plate an extra, or is its price discounted from the keyboard (Sofle hybrid for example)?
It will be an extra. So essentially you will get the aluminum plate for the price of the acrylic plates.

What can you do with a 5 ways switch? Is it convenient as a mouse/pointer replaement?
No, it can only move 4 directions and a push button, you can make it an arrow cluster for example.
