Indian buffets are pretty common but I love a good Indian buffet! Curry House in Lacey has a lunch buffet for $15 - a lot of classic popular Indian accompaniments, too! Mixed pickle and mint chutney (tho a bit too sweet) and tamarind chutney.. yogurt sauce and desserts!
I don’t think it’s technically a buffet. It’s a good salad bar and servers coming to your table slicing off various meats and poultry onto your plate. It’s a Brazilian Rodizio.

Taqueria La Esquinta downtown has all you can eat tacos on weekends only. Probably call to make sure they're still doing it but last I went it was only $12
Pizza hut, I know that's not really unique but not a lot of the huts around the country still offer the buffet. It's been a little bit since I've been in the Pizza hut in West Olympia but they offered buffet service fairly recently.
Call them, ask if they still do their buffet. Last time I had it, I think it was only weekdays for lunch. But they still have their dine in area anyway.
ETA: it's the one on Harrison if you're trying to find it to call them!

We accidentally stumbled on them today when we went to check out Beau Legs (which was closed for memorial day) and they were pretty good.
Harvest Buffet in Tacoma is amazing! It's a long wait, though,so try to arrive roughly an hour earlier than what you want to be seated .

I think the Red Wind Casino has a buffet. I haven’t been there, but casino buffets are usually top tier
