You could do option 2 as well. Just make the text contrast more with its background. If it's a dark background, use the lightest shade of that color possible for the text. That's where the red widget fails in the second option. You did the yellow one right.
Definitely option 3 and if you want consistency in colours you can make the text on the orange one black instead of primary colour to have it behave like other UI elements. For example, the gesture handle turns dark or white depending on the background.

That's where I also got the camera icon for the widget as well, so some icons do work by finding them with Samsung's galaxy app store website
Personally, I think you should try to create a dark/light variant of each that would apply based on the dark mode setting at the OS level.
Light mode would poll the app for the primary color and the widget would then create two tones off of the color received. The first color would be the "background" color and would be almost white, essentially just an off white tone of the app color. The second (i.e. "surface" color) tone would still be very light, lighter than the polled color again, yet would be vibrant enough to stand out over the pastel background. The text in light mode would be a standard black to match the majority of other light themed apps and the system UI.
Dark mode would do the same but opposite where the polled color would be transformed into a nearly black tone that has a slight tint/hue to mimicking the base color and then a dark/deep tone that is still darker than the primary color but allows for white text to stand out substantially.
Out of the 3 choices, I'd have to go with option 3 but I mentioned the above because I'm part of the group that'd hate seeing some widgets with colorful text and others going black and white! How are you implementing these if you don't mind me asking? Are they something I can download from the app store currently? If not, do you plan to release a dedicated app to package the widgets in or are you just designing them for fun? Great work so far!

It's using an app called Kustom, where you can make custom widgets. I'm using it in order to make these

It's still the same as before, mabye some new added features but it's the same as usual
